My First TV Segment!

Hi all!  If you follow me on twitter, you may have seen a few tweets from yesterday!

Can you believe it!?!  I had a TV segment.  I felt just like Joy BauerSmile

I was actually contacted by the TV booker after being referred from my boss at my part time job.  She sent me an article she liked and wanted me to talk about the nutrition tips discussed.

I was literally in and out in 20 minutes.  And the segment was the fastest 3 minutes of my life!

For the life of me, I couldn’t figure out how to post the actual video (and suggestions?)  but if you want to check out my segment… My TV Debut-Is Your House Making You Fat?

I start off a bit shaky but ease into it.  After getting a chance to watch it, I didn’t even realize that I mentioned adding parmesan cheese doesn’t add calories.  Oops!  Hope I was the only one who really noticed that slip up.  I had changed the idea the day before and had practiced it differently.  They said they’d like me to do a monthly segment so I’ll try to get more behind the scenes footage next time.

Onto a delicious dinner…

Heather, can I just come over for dinner?  Winking smile  I found yet another delicious recipe at Running Leaner and Greener.  This time for salmon loaves.

Mini Salmon Loaves with Salsa (from Runner’s World)

Ingredients:

  • 2 5-oz 1 7.5 oz cans wild salmon (drained)
  • 1 cup frozen chopped spinach (thawed)
  • 1 diced red bell pepper
  • 2 tablespoons chopped dill
  • juice from 1/2 lemon
  • 1/2 cup quick-cook rolled oats
  • 2 large eggs
  • salt and pepper to taste

Direction:

Combine all ingredients.  Divide mixture among and bake at 375 degrees for 20 minutes.  Let cool before unmolding and serve topped with jarred salsa.

So I really changed around this recipe.  I’m not as big of a salmon fan as I should be so I cut back the portion from 10 oz to 1 7.5 ounce can.  I also used fresh spinach since I had some on hand.  Then I ended up just putting them on a baking sheet since I don’t own a muffin pan.  I know, put that on my list of need-to-buy kitchen tools along with a ladel and spoon rest (just broke it this a.m.).

You get a hint of lemon in every bite.  Just delightful!

I guess you could call them salmon cakes versus salmon loaves.  Whatever you call ‘em, these babies were delicious.

Lots Of Love and Cheesecake

For as long as I can remember, my mom has always been my Valentine.

Even at 27, she still spoils me with a gift.

As I get older, the gifts are more practical (lotion instead of a stuffed animal), but still my mom always surprises my sister and I with a little something.

I love that my family has filled my life with memories like this.  It is these  little things that I will never forget.  Thanks mom! I love ya!

Ok, so not to make this post super mushy, but it is Valentine’s Day and all.  The one day of the year where mushy is totally acceptable, no?  Winking smile

And so for my new Valentine, I thought I would make swanky boyfriend his favorite dessert…cheesecake!

Now, I did make a slightly healthy change by swapping out regular flour for whole wheat,  but I will warn you that these are not healthy whatsoever.  Delicious in every way…yes!  Healthy…not so much!

Cheesecake Squares (courtesy of the Las Vegas Review Journal )

Ingredients:

  • 1/3 cup butter, melted
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup unsifted flour (I used whole wheat)
  • 2 tablespoons sugar
  • 1- 8 oz. cream cheese, softened
  • 1-  14 oz sweetened condensed milk
  • 1 – 8 oz container sour cream
  • 2 eggs
  • 1 teaspoon vanilla

Directions:

Preheat oven to 350 degrees.  Combine butter, graham cracker crumbs, flour, and sugar.

Reserve 1/2 cup mixture and press remainder into 8 inch square baking dish.

Bake 7 minutes and let cool.

In large mixing bowl, beat cream cheese until light and fluffy.

Add sweetened condensed milk, sour cream, eggs, and vanilla.

Beat until smooth (no lumps Smile).

Pour into baking dish.

Sprinkle with reserved crumb mixture.

Bake 30 minutes.  Let cool and refrigerate to keep chilled.

Then you are ready to slice and serve!  Yippee!

These are divine, sinful even.  If you are cheesecake fan, no doubt you will love these.

Feel free to slice them into large or smaller pieces.  How cute would little bite size minis be??
