Hi, friends! I am at FNCE as we speak but when I saw this month’s redux challenge the no-casserole crockpot, you know I had to be on board. I love my crockpot.

Since many of my recipes consist of soups, I wanted to look outside the box and came up with this delicious crockpot apple cinnamon oatmeal.
This recipe calls for steel cut oats since regular oats will not hold up and become too mushy.
Crockpot Apple Cinnamon Oatmeal (serves 6)
- 2 cups steel cut oats
- 8 cups water
- 3 chopped apples
- 2 teaspoons vanilla
- 1 tablespoon cinnamon
In a crockpot, combine all oats, water, apples, vanilla, and cinnamon in crockpot.
Mix ingredients well.
Cook on low for about 4 to 5 hours, mixing every so often.
Top with your favorites: brown sugar, chia seeds, cinnamon, nuts..the possibilities are endless! Grab a spoon and dig in!
This recipe turned out incredible. It isn’t overly sweet so if you want a little extra sweetness, brown sugar or honey would be perfect additions. I left my house for a bit while it was cooking, and I returned to the smell of apples and cinnamon. YUM!
This made a ton so I portioned it out to reheat for the week. It still tasted amazing!
I will put this recipe in my regular rotation. It is so easy and there are so many mix ins you could use to change it up!
