Vanilla Strawberry Pancakes

Valentine’s Day is right around the corner! I am already getting in the spirit by wearing my very fashionable Valentine’s Day socks swanky mom got me last year as we speak. I also have a very Valentine’s Day inspired meal that would be perfect for the morning of. Vanilla. Strawberry. Pancakes.

Now, I have a love –hate relationship with whole wheat flour. I love love love whole wheat bread and even whole wheat pasta is very

tasty to me. But, whenever I manage to make foods with whole wheat flour I feel I am missing something. It doesn’t help that swanky boyfriend isn’t much of a fan.

My solution is to go halfsies. With half whole wheat flour and half all-purpose, you still get the flavor you are hoping with the benefit of added fiber.
These pancakes will be a great start to your Valentine’s Day morning or any day of the week for that matter.

Vanilla Strawberry Pancakes
Serves 4
Ingredients:

  • 1/2 cup whole wheat flour
  • 1/2 cup all-purpose flour
  • 1 cup fat-free milk
  • 1 egg
  • 2 tablespoons canola oil
  • 1 1/2 tablespoons vanilla extract
  • 2 teaspoons baking powder
  • 1 teaspoon table salt
  • 2 tablespoons brown sugar
  • 1 cup sliced strawberries

Directions:
In large bowl, mix flours, sugar, baking powder and salt. Add in the wet ingredients: milk, egg, oil, and vanilla extract. Fold in strawberries.

In batches, add pancake batter to pan and let cook for about 3 to 5 minutes or until batter starts to bubbles. Flip onto other side for about 2-3 minutes. Top with banana slices and drizzle of maple syrup, if desired. Enjoy!

IMG_9191These were so good! Two smaller pancakes come in at about 245 calories. Not shabby for a breakfast!

I am excited for a long weekend! Swanky boyfriend and I are headed to California for some time with friends and a trip to Disneyland! Although the forecast says rain, I can’t wait!!

I usually mix blueberries into pancake batter (but I have to say that I don’t make pancakes very often). Your strawberry pancakes sound great!

Yum! We usually get fresh local strawberries showing up in the stores around mid February- looking forward to trying these! Hope the weathers holding out for you…we’ve had rain the past 3 days. On the bright side, it shouldn’t be crowded at Dsneyland :-)

Wonderful Vday breakfast! I love pb and bananas or apricot jelly topping with real butter. Pancakes are my fav indulgent breakfast! Hope you had a fabulous weekend, can’t wait to see the pics!

I love the idea of adding strawberries to the pancake batter! I’ve done this with bananas and blueberries, but for some reason, never strawberries. You’re right–this is a perfect Valentine’s Day recipe. I think whipped cream and chocolate chips might make it even extra special/romantic? ;)

Oh wow, these pancakes look awesome! I often go halfsies on ww and white flour too, both because Peter is not a huge ww fan, and because some thing are just tastier with a mixture – like these yummy pancakes!

Not sure that I have ever put strawberries in pancakes before! My favorite combo is blueberry with lemon zest – yum!

I like to add blueberries! But, if I don’t add anything I like to top pancakes with peanut butter and honey :)

What cute pancakes! And I’m with you on the halfsies on whole wheat flour. Things just don’t seem to work right when it’s all whole wheat. Plus white flour, although not the absolute healthiest, is delicious. :D

My favorite pancake mix-ins are definitely banana and chocolate chips. But really I would like any kind of pancake :) This sounds so good!
