(Not Your Typical) Burgers and Fries

Hi, friends!  Hope your week is flying by!  Mine is going pretty good.  With my new job, I have hours that vary.  I thought I would love starting the day

off early and getting off when the sun is still up.  I find those days are the most difficult.  I was happy my schedule got switched today and I started at 9.  The funny thing is that I don’t take all that long too get ready it’s just that I take about an hour to dilly dally.  Most of the dilly dallying takes place on the computer.  Reading and commenting blogs, editing pictures, and reading comments on my blogs.  I love sitting outside with my hot cup of coffee with my computer in hand.  The simple things that make us happy. 

The nice thing about this job is that lunch is provided, giving me more time to dilly dally.  But there is no doubt in my mind had I needed leftovers for lunch today, I would have eagerly packed up last night’s dinner.

I modified this recipe for BBQ chickpea burgers quite a bit, eliminating about 5 ingredients and adding in some of my own.  This original recipe looked amazing, but I always try to use as many ingredients I have around all the house as possible.  The addition of egg in these burgers makes them now a vegetarian option, not vegan.  Swanky boyfriend took a back seat and acted as my sous chef for the night.  He says I scare him with my use of a knife.  Winking smile

I am guessing the combo of egg, bbq sauce, breadcrumbs, and flax but I didn’t have any problems with

these staying together like some veggie burgers I’ve made in the past.

BBQ Chickpea Burgers (adapted from Oh She Glows)

Serves 4 large or 6 small burgers

Ingredients:

  • 1 can chickpeas, rinsed
  • 3 large garlic cloves, minced
  • 1  diced red pepper
  • 1 jalapeno, seeded and diced
  • 1/2 diced onion
  • 1 small carrot, grated
  • 3 tbsp BBQ sauce
  • 1/4 cup breadcrumbs, or more as needed
  • 1 tbsp ground flax
  • 1 egg
  • 1/4 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 1 tablespoon olive oil

Directions:

Drain and rinse chickpeas.  Chop, grate, and assemble all ingredients and all to a large bowl.

Mash ingredients or use a food processor to combine.

With hands, make a burger patty.  Set aside patties.

Add oil to pan on medium heat.  Add burgers to pan, cooking on each side about 2-3 minutes or until browned.  *Note-feel free to bake burgers as well.

This burgers had a slight kick to ‘em!!!  I loved that!

I decided not to eat this with a bun because all the ingredients in the burger seemed super filling.  But, the addition of sweet potato fries seemed the perfect thing to round out the meal.

Simple Sweet Potato Fries

(serves 4)

Ingredients:

  • 2 sweet potato fries, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 2 teaspoons cinnamon sugar

Directions:

Preheat oven to 425 degrees.  Toss sweet potato slices with garlic, olive oil, and salt.  Tossing all ingredients in a Ziploc bag works great!

On pan (or pizza stone in our case) lay sweet potato slices and bake in oven for about 45 minutes, being sure to turn half way.

Once slightly crisped, remove from oven and immediately sprinkle with cinnamon sugar.

I can’t say enough how much I loved this combination.  This is a great burger for even those meat eaters out there.

I know that morning dilly dallying well :) I have one day, Friday, where I start at 9am and I do exactly the same online. But then the time disappears and I have to madly get organised at the end! Whereas the days I start early I am just fine…

On more important matters, these burgers look incredible and I would happily dive into your plate if only I could :)

I am SUCH a morning person… My fave time of day is about 5:30 in the am with that 2nd cup of coffee, catching up on blogs, emails & news from overnight.

YUM I used to add BBQ sauce to veggie burgers and haven’t done that in ages. Nice reminder. I’m really not a morning person, but I do get up and go to work early.

I know what you mean about the dilly-dallying! I’m usually a pretty early riser, but I love to sit with hot tea and read something, whether on the computer or a book. Somehow I just feel better easing into the day instead of hopping to it. I’m glad you like your new job!

These chickpea burgers and sweet potato fries look fantastic! I’m all for boyfriends ad husbands acting as sous chefs. You mean you aren’t supposed to wave your knife around in the kitchen? ;)

I LOVE IT! Totally pinning this one, what a fantastic combination. I love the crust that is formed from stove top cooking. I am a total morning bird but tend to catch more up on my blog readings on the weekends (note, this post!!). Every morning I wake up to coffee and computer…it is the perfect combo, agree!!!

Those burgers look delicious! I love having time to ease into the day and read blogs in the morning, but I rarely get up early enough! Getting off work early is always nice though :) Are you enjoying your new job? I’m a dietitian too, and your job sounds really interesting!

Those burgers look awesome! I may have to give them a try. Glad you like the new job and that your hours are changed a little now to give you more morning time. I am a morning person, but I can easily switch to being a night person. When I have the time to do all my blog reading (which obviously has not been recently!), I like to do it in the afternoon. If I do it in the morning, I end up late for work! I usually spend my before work hours checking student emails because they are blocked from my work computer so I can’t even check them on my lunch break.

Love your burgers & fries! I’ll have to make some sweet potato fries soon!

I’m a morning person and get up at 4:00 a.m. most mornings. I’d prefer getting up about an hour later, but I get most of my grading/teaching prep work done in the early morning. Plus, I teach 7:30 classes. I guess the downside of getting up so early is that I often fall asleep really early… But I love knowing that I have accomplished most of my work by 1:00 p.m. or so.

Haha, I am the same way in the mornings…like right now. I haven’t been able to carve out any time at work to read blogs so I’ve been seriously slacking. And I do try to make a bit of time in the mornings, BUT I’m usually late. I’m either checking emails or snuggling with Lily. :) These look SO good. I’ve never made veggie burgers at home…NO idea why. Time to change that!

I am absolutely a dilly dallied in the morning. Gotta have my coffee and blog time before the kids get up at 7! Love the veggie burger and sweet potato fries combo- I am making falafel this week, so I’ll be mashing up chickpeas too! Have a wonderful week :-)
