The Best Roommate

Living with someone is great.  It’s those little things that make it extra special.  Coming home to

a handwritten note saying I love you, a finished home project, clean dishes, or even a home cooked meal.

This boy has really been a fabulous roommate.  I will choose to forget about the clean clothes that are never put away and the toilet seat that is constantly left up (that I almost fell in while half asleep the other night). Winking smile

Last night I came home to a delicious home cooked meal.  The meal of choice was lemon chicken with mushrooms and caramelized onions.  I know what you may be thinking…Kristen this is your blog, not his.   But it was just too delicious not to share.   And it is a one pan meal.  And aren’t you guys getting sick of all my soup recipes??  Enough said.

Swanky Boyfriend’s Lemon Chicken with Mushrooms and Caramelized Onions (serves 4)

Ingredients:

  • 4 chicken breasts
  • 4 lemons, 2 juiced and 2 sliced
  • 1 pound portobello mushrooms, sliced
  • 2 sweet white onions, sliced
  • 10 cloves garlic, chopped
  • 3 tablespoons dried thyme
  • Sprinkle of salt and pepper
  • 4 tablespoons olive oil (to lightly coat pan)

Directions:

Preheat oven to 425 degrees.  Start by chopping up mushrooms,

onions, and garlic.  In a large roasting pan lightly coat with olive oil.  Layer vegetables and lemons and top with chicken.  Add garlic and other seasonings to the pan.

Bake in oven for approximately 1 hour, turning chicken breasts over half way.  *times may vary depending on the size of chicken breasts.  Remove from oven and let cool.  Dish out chicken and top with onions, mushrooms, and lemon slices.  Serve warm.

It’s not just cause I love him, but this chicken was fantastic.  I loved the slight hint of lemon you get in each bite.

The caramelized onions and mushrooms were the perfect accompaniment, adding both sweet and savory flavors to the dish.

This has the trifecta: easy, healthy, and flavorful!  The best part…since it’s just him and I, we have leftovers!

For some reason, I am exhausted this week.  Perhaps it was too much fun this weekend that did me in.  I start work a bit later tomorrow so I am hoping for a bit of sleeping in and some much needed bootcamp time.  And with that, I am off to snuggle with my roommate.

Yumm! I need to try this! I might have to get a garlic press because I don’t know how my hands would smell after chopping 10 cloves :-)
Meeko is my roommate – and I love it! She is always happy to see me when I come home.

Yeaaaa!!! Good boyfriend!!! Having that ‘roomie’ does have it’s benefits, doesn’t it?? A great guy that can cook?? Win, WIN!!! A true keeper :) My ‘roommate’ in my BF too. We have been shackin’ a little over a year, together for 3!

LOL – hate it when you almost fall in the toilet. After 17 years I still can’t get my hubby to put the laundry IN the hamper. It ends up on or around. How and why is it such a hard concept to get?

I LOVE this dish! I’ll be making this for me and my sweetie tonight. Seems SUPER easy and I think I always have these ingredients in the house!

And as far as laundry is concerned, I’ve just accepted that he’ll never actually FIND the hangers or hamper to save his life. He just calls it his “adorable quirks” :)

I fell in the toilet so many nights when E and I first moved in together. The good thing is after much harping, the seat is now down 95% of the time. I grew up in a house with all girls (aside from my dad) and the toilet seat was never left up. There’s hope!

I actually have FIVE roommates (four guys, one girl), and we live as one big happy family in a four story house in the heart of a bustling city. There’s never a dull or lonely moment, which is probably what I love most about the living situation. Last night we made a fire in the fireplace and watched the presidential debate together (along with friends). It was a major koombayah moment. ;) That said, living with four guys definitely comes with challenges. Cleanliness? What’s that? Sometimes I feel like mom, picking up their Doritos bags and cookie crumbs. ;-p

I have 3 male roommates who range in age from 8 to 46. None of them cook for me but I have fallen in the toilet. Your arrangement sounds a little better, you get meals and there may still be time to reform the other habits. I’m still giggling that swanky boyfriend qualifies as “roommate”.

Simple, full of delicious flavor, and cooked for you? I love it! I love my husband dearly, but a cook he is not! He does make up for it though by doing the dishes when he is home. BTW-he spent the last 2 days in Vegas/Boulder City and says it’s cooler there than in San Diego…I’m so ready for some fall like weather!

Hello there lady :)
I love to cook but don’t get too as often as I’d like due to my schedule of getting off work so late (as you may recall) :/ But on Sunday 10/21 I decided to try this dish because it looked so easy…… yet so yummy. Boy, was I right on the money or what!! It turned out so good – I was so proud of myself!! (Dork!!)……I know!!! Thanks again hun for another good one. I can’t wait to try more and I will keep you updated :) Oh, by the way…….I’m 6mos now!!! :D
