Tis The Season…For Pumpkin

Were you waiting for these beauties???

Eek!! It’s pumpkin time again folks! I have been seeing pumpkin recipes left and right all over the blogosphere and I couldn’t wait to purchase my first can of pumpkin. I heart pumpkin for many a reason, but it’s nutrient profile is not to be forgotten. Most importantly pumpkin is loaded with the antioxidant, beta-carotene, which may help to reduce the risk of developing certain types of cancers.

I spotted this recipe for pumpkin spice mini muffins on Iowa Girl Eats and knew I had to make them immediately. I did change up the recipe a bit, adding in some whole wheat flour and eliminating the cinnamon sugar topping.

Pumpkin Spice Muffins

Makes approximately 16 muffins

Adapted from Iowa Girl Eats

Ingredients:

  • 1 all purpose flour
  • 3/4 cup whole wheat flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon pumpkin pie spice
  • 3/4 of a medium sized banana, mashed
  • 1/4 cup vegetable oil
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract
  • 3/4 cup canned plain pumpkin (not pumpkin pie filling)
  • 1/2 cup soy milk
  • 1/3 cup butter, melted

Directions:

Preheat oven to 350 degrees. Mix together flour, baking powder, baking soda and spices in a large bowl.

In a separate bowl, whisk together mashed banana, vegetable oil, brown sugar, vanilla extract, pumpkin and skim milk until blended well.

Stir dry ingredients into wet ingredients in three batches. Do not overmix.

Spray pan with non-stick spray or use liners and fill the cups to the top. Bake for about 15-20 minutes or until a toothpick inserted in the center comes out clean.

This recipe just reinforces my love for pumpkin! And with the addition of whole wheat flour, it still maintains that tasty with a wee bit more fiber.

These were light, fluffy, and have the perfect hint of pumpkiny (yep, it’s a word Winking smile ) flavor.

If you are looking for a bit more sweet, feel free to top them with cinnamon sugar. These hit the spot and took care of my pumpkin craving.

Speaking of my love for all things pumpkin, it was the viagra lowest price perfect time to sample Starbucks VIA Pumpkin Spice Flavored Coffee. After reading about my love of pumpkin on my blog (especially pumpkin spice lattes), the folks at Starbucks thought I would enjoy sampling their newest flavor of Starbucks VIA. It is perfect for the fall season, don’t you think??

Ok, so I did it out of order but got the same results.

This was delicious! The pumpkin flavor was spot on. I think adding water would work well in here. Adding milk yielded a much creamier flavor.

I can’t wait to use up the other two samples. A big thanks to the folks at Starbucks for the samples. And if you want to try it out for yourself, this seasonal flavor will be in Starbucks stores.

I’ve been wanting to make pumpkin bread and/or muffins! I’ve made everything pumpkin but that pretty much :) . I love pumpkin butter because it’s so versatile!

Cool!!! I did not know they had the via in pumpkin spice flavor!!! I am SOOO ON THAT!! I love me a via for an afternoon ‘perk!’ :) Pumpkin, pumpkin, pumpkin…I LOVE it too!!! Those muffins look divine, I can almost smell them from here!! Pumpkin in my oats, pumpkin smoothie (had yesterday) and pumpkin and fig butter (from TJ’s) a winning combo!

I have a recipe for some pumpkin cookies. I haven’t made them in eons, but they are super soft, almost cake-like. Maybe I need to pull that recipe out ;-)

Yay! So glad you satisfied your pumpkin fix! I made some pumpkin pancakes last week that were very tasty. The Starbucks Pumpkin Via sounds interesting-will look for it in the stores. I’ve tried the regular Via which is pretty good for instant coffee, but the pumpkin sounds yummy. Enjoy the rest of your week!

These look good. I’m such a sucker for fall, so anything pumpkin-apple-spice is a win for me. It’s thanksgiving (in Canada) this weekend and was thinking of testing a batch with butternut squash…will let you know how that turns out!

Those muffins look so good! I’ve added pumpkin to muffins before, but it never gave it the “pumpkin” taste.

I’m with you on the pumpkin lovin’! I’ve been eating it in so many ways lately–pancakes, muffins, bread, parfaits and mini-microwaveable custards. The list goes on and on. :) This recipe looks delicious; I bet I could substitute oat and almond flour without a hitch! Oh, and Via’s are my lifesaver. I actually drink them most mornings because they’re so fast. ;) The French Roast is my favorite because it’s super strong, but I’ve also been enjoying the pumpkin spice. You’re right–it’s so much better when made with milk!

Love pumpkin too, I need to perfect pumpkin pancakes (never got them right). Question- the via in pumpkin- are they sweetened? With what? Have to check them out.

Pumpkin pancakes sound delicious! I want to make my own pumpkin from scratch this season too! I think I need to start a list for just pumpkin. :)
In regards to the VIA I am sure they sell sugar varieties, but the samples I received have cane sugar in them. It was a bit sweeter than what I normally do when I have coffee, but still good! :)

I need to buy pumpkin – stat – so many pumpkin recipes out there! Yours looks delicioius.

My boss uses VIA, she likes them, but I think it breaks down to about $1 a packet, but I guess that’s less than what you would pay for one at Starbucks!

I was really impressed with the flavor, but it is hard to beat a pumpkin spice latte you get in their stores. Let me know if you give them a go. :)

Ah, gorgeous! I do wish we had more pumpkin products in Australia, but the lack of them at least provides inspiration to make them from scratch from your American recipes :)

But if you get pumpkins, you can definitely make it from scratch. That is my plan down the road to cut back on using canned items. :)
