Overnight Oats and I

Hi, friends!  I didn’t make it through all my new fall shows last night (I feel a sore throat coming up so to bed I went) but I did catch How I Met Your Mother.  For any of you that watched it, do you notice how serious a turn the show has made?  It definitely had funny parts, but much more drama.

Anyway, I have to give full credit to Oh She Glows for the delicious breakfast I have been enjoying lately.

The best part is that I had all the ingredients on hand.  Don’t you love when that happens?

The only change I made to the recipe was swapping the walnuts for almonds.  I think both would be great in this dish.

Blueberry Banana Pie Vegan Overnight Oats (from OhSheGlows)

Yield: 4-6 servings

Ingredients:

  • 2 cups rolled oats
  • 2 cups non-dairy milk (I used soy)
  • 1/3 cup pure maple syrup
  • 3 tablespoons chia seeds
  • 1 teaspoon cialis order ground cinnamon
  • 2 small bananas, peeled & chopped
  • 1-1.5 cups fresh blueberries
  • 1/2 cup chopped walnuts almonds
  • Pinch of salt
  • 1 teaspoon vanilla
  • Granola sprinkled on top before serving

Directions:

Mix in a casserole dish and place in fridge overnight like 1…

In the morning, give it a stir and enjoy cold with a sprinkle of granola on top. Keeps for about 2-3 days in the refrigerator.

I don’t even know how to tell you how good this recipe was!  And how easy!!  With little added sugar from the syrup, and chockfull of fiber from the oats, seeds, nuts, and berries, it’s also very good for you!

I have only had overnight oats with yogurt, but I didn’t miss it.  I used soy milk, but any milk of choice would work great.  Swanky boyfriend, although not picky, hasn’t liked my too healthy breakfast creations in the past.  This he loved.

It’s almost midweek..gotta love that!  I have been doing a pinterest workout this week which, at least, is getting me a bit of exercise.  I tell you, although it’s not all that long I have been sweating by the end.

And with that folks, I am ready to watch Castle On Demand.  My sister said it was really good last night!! Smile

Looks like quite the fiber-full breakfast! What a great way to start your day. I love starting mine with a bowl of Kellogg’s FiberPlus cereal – its a great source of fiber too and really helps me stay fuller longer.

This looks delicious! I’ve been wanting to try something like it, but baked. I’ve had overnight oats a few times and liked it enough, but I really prefer my oatmeal warm. Today I’m making some with pumpkin to make it feel like fall, even though it’s kind of warmed up again around here :-)

Love this. Definitely want to give it a try! Oatmeal is my go-to breakfast and sometimes that 90 second warm-up can make or break my morning. Will give this a try for sure! So Houston next year yes? :)

I eat oats all the time, but this is a great change! I am definitely looking into this. I loved the last scene in HIMYM with Klaus talking about soulmates. I watched it three times :)

I’ve never tried Overnight Oats–not sure how I would feel about cold oatmeal! Is that the texture of it?

I will admit, the texture is a bit different. But I will let it sit out for a few minutes and it’s delicious! It’s chewy, but in a good way. Let me know if you give it a try. :)

I’ve only ever tried overnight oats once, but they were heavenly! I think as the weather gets cooler, I’ll break it out again — right now I’m on a smoothie kick!

I just borrowed season 1 of How I Met Your Mother from the social worker at work! I have seen the first 3 episodes, but I think I am going to take it easy tonight and watch a few episodes, so excited :)

I can’t believe I’ve never had overnight oats!

My go-to breakfast is usually a smoothie with some frozen fruit, almond milk, protein powder and maybe a little pb :)

Don’t tell me what happened on Castle! I DVR’d it, but have to wait until my hubby gets back in town to watch it with him {he is celebrating Oktoberfest in Germany BTW-rough life!!}. These oats look delicious! I had pinned another overnight oat recipe to try-maybe I need to make a combination of the two :-)

I love the idea of making breakfast that will last all week! Even though I’m not a big oats person, this recipe is making my mouth water. I love the inclusion of fresh bananas and blueberries!

My go-to quick breakfast is either Greek yogurt with peanut butter, berries and granola or hard boiled eggs and a pre-cooked sweet potato!

That does look delicious! And I do really do love when I see something I want to make and then realize that I already have all the ingredients on hand! Happened yesterday with blueberry muffins! :)
