Hello, hello!
Since I didn’t get to share my weekend with you due to computer technical difficulties, I thought why not give you a peek in on the grocery loot I picked up Sunday. Swanky boyfriend and I are now living together (!!!), so we have started grocery shopping together as well. We did a bigger shop this weekend to get some staples along with meals for the week.
Our Loot:
Produce:
- Apples
- Bananas
- Watermelon
- Green Peppers
- Lettuce
- Spinach
- Broccoli
- Blueberries (frozen)
- Banana chips (splurge!)
- Snow peas
Grains:
- Whole wheat bread
- Oatmeal
Protein
- Almonds
Miscellaneous
- Coffee
- Coffemate (the boy’s)
- Light Italian dressing (the boy’s)
- Vegetable Broth
There is no better feeling than having lots of delicious and healthy foods at home!! I was so excited to get in the kitchen!
After getting back from the grocery store, I got started on some low fat whole wheat blueberry muffins from Prevention RD to enjoy for the week. Even though I know I should sit down for a nice breakfast in the morning, with this new job, something quick is what’s working for now.
These muffins fit the bill.
Low Fat Blueberry Muffins (from Prevention RD)
makes 12
- 1 cup unsweetened applesauce
- 2 cups 100% whole wheat pastry flour
- 1/2 cup sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups blueberries
- 1 teaspoon vanilla
- 1 large egg, beaten
- 2 Tablespoons unsalted butter, melted
Directions:
Preheat oven to 325 F. Combine flour, sugar, baking soda, and salt in a large bowl. Mix well.
In a medium bowl, mix eggs, melted butter, vanilla and applesauce.
Apple sauce is a great replacement for sugar, fyi.
Add to the flour mixture and stir until just blended.
Gently fold in blueberries.
Gently is key since I broke a few of the berries..oops!
Scoop batter into 12 muffin tins and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
Allow to cool for 10 minutes and enjoy!
These were very good! Now be sure to keep in mind, they are definitely healthy tasting muffins.
My batter seemed to be very thick, but the muffins still turned out very nice and soft.
One muffin is around 150 calories making it the perfect addition to a breakfast or by themselves as snack.
I am looking forward to grabbing these along with fruit for breakfast during the week. Breakfast made easy!
The week is moving along pretty good. Trying to do my best with healthy eating and exercise with a new schedule. You know me and my love of a planned out schedule.

Yay for the big move-in!!! You 2 seem so compatable and I couldn’t be happier for you! New roommate (!) and new job…life is good!! I’m glad you enjoyed the muffins. And yes, very healthy muffins…I generally use that as code for “not super sweet”!

Smoothies!! Prep the night before, add ice and blend in the morning. Perfect for busy mornings!

Those muffins look great! I just made some pumpkin bread the other day, and I’m thinking I maybe should have made muffins instead. More portion control…
Yeah, me and breads have a love/hate relationship. They are so good, it’s hard to stop at one slice.
My staples are super basic..grains (quinoa, rice) lentils, beans, veggies galore, fruit, snacks, salsaaaaa (lots of it!) and COOKIES!! Some random goods too! Yay for grocery shopping with the swanky B.

I love the trick of putting applesauce in baked goods to help replace butter and sugar — so moist and delicious!

Horray for the new living situation! Swanky Boyfriend sure is lucky to now have such a fabulous cook in his home! The blueberry muffins look SO good; I love that they’re slightly blue, which means there was no skimping on the fruit (as it always should be). Do you think I could replace the pastry flour with oat flour, or would that make them too dense?
I’ve been eating muffins (pumpkin) all week too; they really are the perfect grab n’ go breakfast! <3
If you noticed from my pictures, the dough already was slightly dense. I would say you could try half and half or just go for it. The overall taste and texture was still great!

I love reading grocery hauls. I think its interesting to see what other buy and it gives me some ideas of what I should pick up at the grocery store, too.

The muffins sound good! When I’m busy and need something portable, I often make a banana sandwich: cut banana in half and then fill it with some raw almond butter.

My ‘boy’ is a coffee mate kind o guy too! My? I’m a black coffee girl.
Anywho, love the muffins. You can never go wrong with a nice whole grain fruit yummy to start your day. I do a smoothie or oatmeal, typically. Staples; almond milk, oats, pb, produce, frozen veggies, beans, chicken, fish.
