I’m back! All I have to say is that between Windows Live Writer, WordPress, and Dreamhost, not one offer customer service via phone which can be somewhat frustrating to those (ahem, me) that don’t know computers. Thankfully, after a bit of back and forth with Dreamhost, I am back in business!! And a big thank you to all of you with congrats on my new job!!! I am excited to see where this path leads me.
So back to this post that I have been anxiously waiting to share…
I. love. tacos. Mexican food tops my list of favorite foods for this reason. Who doesn’t love guacamole, salsa, and delicious corn tortillas.
After eating at one of my favorite Mexican restaurants El Segundo Sol a few weeks ago, I knew I wanted to recreate a dish of theirs, vegetarian tacos.
What makes their tacos so unique is the type of vegetables. Juicy grape tomatoes, onions, peppers, and asparagus (ASPARAGUS!!) make up this tasty taco. I think my final result turned out pretty similar to the real thing.
For my tacos, I got together the assortment of fabulous veggies. Lightly tossed them with olive oil, salt, and pepper.
I threw the veggies on the grill and let them
hang out there for about 20 minutes. (there was a grill malfunction cause mine took FOREVER to grill up)
Veggies are nice and grilled, ready to go.
Then you are ready to assemble!! Layer vegetables, cilantro, and homemade guacamole. Enjoy!!
Grilled Vegetable Tacos (serves 2)
Ingredients:
- 2 cups vegetable of choice –onion, asparagus, red or green pepper, cherry tomatoes
- 1 teaspoon olive oil
- Cilantro, for topping
- 4 corn tortilla
- Guacamole: avocado, lime, cilantro, tomato, red onion, salt, and pepper
Directions:
Toss vegetables with olive oil, salt, and pepper. Grill vegetables for about 20 minutes. Layer vegetables, guacamole, and cilantro.
This is a quick and easy way to get in your taco fix for sure!
I can’t even say how delicious these tacos were. I can’t even tell you how yummy asparagus is in the mix. Such an unexpected, but great addition!
I have had a really busy week, but managed to get in a good run on the treadmill this morning. A workout does wonders, doesn’t it?

Oh awesome – definitely love the completely different veggies for tacos. I always just think of the typical peppers, onions, sometimes mushrooms.

I had such a busy week last week, just catching up – congrats on the new job! That’s so exciting! And I never would have thought to have a veggie taco. Ever. But sans the onions and the grape tomatoes, I think it looks delicious – who knew asparagus would work?!

, but these veggie tacos sound pretty amazing too! Love the addition of asparagus-something’s never would have thought of. Actually anything with corn tortillas and lots of guacamole is fabulous in my book

How great are these tacos!?! I’m loving the veggie overload! What a great way to revamp a common dish AND improve the nutritional quality of it as well. And I love asparagus – such a good source of fiber. Never would have thought to add it to my taco, but now I’ll have to give it a try.
