Hi! Yesterday I thought it was Thursday. Isn’t that the worst feeling. But the boy and I broke up the mid week slump by renting 21 Jump Street at the redbox.
Coconut Potato Curry and One Lovely Blog

I enjoyed it! Definitely some funny parts. And Channing Tatum isn’t all that bad to look at, don’t you think?
Also helping me get through the week is enjoying leftovers of this delicious dish.
I (with the help of swanky boyfriend) whipped up this coconut potato curry dish which has made fabulous leftovers for lunch.
The stars of this recipe are golden potatoes,
fresh basil, and sweet tomatoes.
Coconut Potato Curry (serves 6)
Ingredients:
- 1 pound golden potatoes, diced
- 2 red onions, diced
- 2 tablespoon chopped garlic
- 1 tablespoon curry
- 1 teaspoon cumin
- 1 teaspoon garam masala
- 2 teaspoons olive oil
- 1 teaspoon red pepper flakes
- 1 can chickpeas, rinsed
- 2 cups tomatoes, diced
- 2 tablespoons tomato paste
- 1 cup water
- 1 cup frozen peas
- 1 can lite coconut milk
- 1/2 cup basil, chopped (and more for garnish)
Directions:
Start by adding oil, onion, and garlic in sauté pan.
Add in seasonings: red pepper flakes, curry, cumin, and garam masala.
Add potatoes to pan and mix well to combine.
Sauté until potatoes and softened and onions are caramelized, about 10-12 minutes.
Add tomato paste along with about 1 cup of water to pan and stir.
Add in tomatoes and rinsed chickpeas.
Mix well.
Add frozen peas and combine all ingredients.
Lastly, add in the lite coconut milk.
Once coconut milk is added, let simmer until sauce is reduced, about 5-8 minutes.
Ads basil and you are ready to dish up!
This was fabulous!! All the spices added quite a bit of heat, but the flavors were so bold I enjoyed every bite!
If you are looking to add in some additional protein, tofu or chicken would pair wonderfully with this sauce.
I heart coconut milk.

- Swanky boyfriend and I met at a friend’s wedding (the 3rd one to be exact). He is actually the bride (my friend’s) cousin!
- I love organizing, but I have never been a fan of cleaning. For those of you that know me, I know are not surprised by this fact.
- Bridezillas has been a recent guilty pleasure of mine. It just cracks me up to see these brides just lose it. Fingers crossed this isn’t me!!
- Not to toot my own horn, but I am really good at hula hoop. I have never been one of those “athletic” types..not very coordinated perhaps. But I will tell you, I can hula hoop for quite a while!
- I am a sucker for infomercials. I think I get this from my dad who is the same way. The last purchase I made was on the hair product, Wen. I wasn’t that impressed, btw.
- This is not something I am proud of..but if I wear my hair down, you will often find me searching for split ends to trim. Horrible I know!! I. Just. Can’t. Be. Stopped. (hence why I am so gullible with infomercials).
- I occasionally will talk in an accent. I honestly don’t know how this one started, but even in grade school my friends and I would talk in silly voices. The funny thing is that half the time I don’t realize that I do it.

Curry dishes are one of my absolute favorite things! I’ve made Chana Masala with chickpeas, but this curry variation looks great too – another recipe to add to my list! I wish I had time to make all the things I want! And this post reminded me that I completely forgot to post about the award you nominated me for – I’ve been so busy with moving ugh!
I’m not a huge curry fan but this I could definitely get on board with! It looks so incredible!

That curry looks awesome. Minus the peas. But I love a good meatless dish like that.

I love that you check out your split ends – I had a teacher in high school who always called me out on it because I kept looking for them while in class. And this reminds me that I need to get a haircut!
The potato curry looks divine!! The only thing is I’m not a huge fan of curry milk..However, the last time I tried it was many years ago..Perhaps I should give it another try with this recipe? =)
I don’t watch the infomercials, but I’m a HUGE fan of QVC! I purchased some amazing items that I would never even have thought about! You can count on QVC being on all day during the holidays =).

Ohh a silly fact hmm, I was always the quiet one in high school/middle school, but I played in one of the lower level concert bands all 4 years of college and would make “smart comments” to the director all the time. This earned me and my friends special recognition for our shenanigans at our final concert!
I also may or may not have drew pictures on the music to narrate the songs
I need to rent that movie! We just missed it in theaters.

There was a marathon on one day and both my boyfriend and I got drawn in!! I can’t believe some of these brides are THAT crazy.
I’m so jealous of your confidence in the kitchen! I love love love curry, but for some reason, am way too intimidated to ever try making it in the kitchen. It just seems so complex every time! Yours looks doable though… bookmarking it and hopefully I’ll muster up the courage one day

I just watched “21 Jump Street” last week! Channing was surprisingly very funny…looks & humor, not a bad combo!
Silly fact about me: I read magazines backwards. Seriously. I think it’s because for some reason it’s easier for my to do that one-handed page flip-through with my left hand (even though I’m a rightie).
I rarely have curries but I like the look of this one! It would help with thinking you were day closer to the weekend than reality, I suspect

You had me at coconut…and captured me with curry. Yum! These are two of my favorite flavors, and when combined together, they make wmy heart oh so happy.
I have to admit, I’m a bit jealous of your hula hooping skills! I’ve tried to become a master my entire life, and *still* can’t keep the hoop up for more than two seconds. I’m coordinated in most sports, but clearly hula hooping is not one of them.

I love the taste of coconut milk but I never think to use it in my cooking – I’ve put it on my shopping list and bookmarked this recipe to remind me to use it!
I saw 21 Jump Street this past weekend … it was a lot funnier than I thought it would be!! I laughed pretty hard and at the same time I was super excited because I realized it was filmed in New Orleans (where I live) … I think that made the movie SO much more fun! haha.
And YES Channing Tatum … VERY nice to look at!
