Mexican Stuffed Potatoes

In other exciting news, the boy and I had quite the delicious dinner I had to share with you. Potatoes get a bad rep for being on the starchy side. But please, don’t fear. Potatoes (skin and all) are chock full of fiber, potassium, and Vitamin C to name a few.
Enter, mexican stuffed potatoes.
This is seriously an easy midweek meal and very filling! I ended up eating only a half a potato and was stuffed!
I love this idea cause you can really fill these spuds with whatever ingredients you like.
Mexican Stuffed Potatoes
Ingredients:
- 4 large baking potatoes
- 3/4 can kidney beans, rinsed
- 3/4 can corn, rinsed
- 1/3 cup chopped cilantro, chopped
- 1/2 cup plain Greek yogurt (and extra aside for topping)
- 1/4 cup cheese (I used a Mexican blend)
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Tomatoes sliced for garnish
Directions:
Start by either baking or microwaving potato. If baking, bake on 375 degrees for about an hour, or until soft. If microwaving, about 10-15 minutes on high.
Once potatoes are cooked, start by mixing up your add ins. Combine cilantro, beans, corn, cumin, and chili powder.
Add in Greek yogurt and cheese.
Mix well to combine.
Then you are ready to scoop out the inside of the potato. Add potato filling to other ingredients.
Mix well and get stuffing!
Line up potatoes in baking sheet. Put in oven preheated at 375 degrees for 10 minutes. Add sprinkle of cheese and pop back in oven for another 5 minutes or until cheese is melted.
The finished product!
Top with Greek yogurt, cilantro, tomatoes and enjoy!
These were so delicious!! The chili powder and cumin added a nice zestiness to the potato.
Granted, the potatoes take some time to make but if you choose to bake you could do it ahead of time.
Feel free to mix in any of your favorite ingredients! I can’t wait to make these again!

Those look so much nicer than my stuffed potatoes LOL. I just nuke the sweet potato, cut it open and pile everything on with out mixing up before hand. Super messy and not pretty!

Very NICE!!!! I haven’t made a stuffed, or what I call a twice baked, potato in a very very long time. This use to be one of my son’s favorite. This is a great twist on the standard…I love it!!! It’s a great photograph too!

What gorgeous potatoes! We are definitely believers in potatoes as a nutritious starchy vegetable and they feature fairly regularly – mostly baked as a side, but now I’m keen to try them like this

I am totally making these for me and my SIL next week – she’s back from vacation so I’ll be cooking up her lunches again. I typically will bake 4 baked potatoes on Sunday night, and just let them cool and throw them in the fridge – it’s nice on a weeknight to just chop a couple up with some rosemary, garlic and olive oil – but tastes like you spent a lot of time making them!
