Recipe ReDux: Small Bite Desserts

ves bite sized treats. They are just so darn cute!

And this is not just any challenge. Recipe ReDux celebrates their 1 year anniversary! I have been happy to be part of ReDux from day one. It has gotten me to challenge myself, have more fun in the kitchen, and meet fabulous bloggers (and cooks) along the way!

My recipe this month is inspired by one of my favorite childhood summer treats, the ice cream sandwich. We had an ice cream truck drive down our cul de sac once in a blue moon. When it did, an ice cream sandwich topped my list of favorite sweet treats. This is the perfect dessert to make into popable (it’s a word, right?) bites as any ice cream sandwich eaters know; it can get a bit messy.

This recipe is also a tad bit healthier. I substituted white flour for whole wheat pastry flour along with using natural peanut butter for the cookies. Although the texture was slightly different, the taste was still there! Peanut butter perfection!

Mini Peanut Butter Ice Cream Sandwiches (makes over 20 minis)

For peanut butter cookies:

Ingredients:

  • 1/2 cup unsalted butter
  • 1/2 cup natural peanut butter
  • 1/2 cup white sugar
  • 1/2 cup packed brown sugar
  • 1 egg
  • 1 1/4 cups whole wheat pastry flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 teaspoons baking soda

For assembly of sandwiches:

  • Slow churned vanilla ice cream (or favorite ice cream)
  • Chocolate pieces, chopped thin

Directions:

Cream together butter, peanut butter and sugars.

Beat in egg.

In a separate bowl, sift together flour, baking powder, baking soda, and salt.

Stir into batter.

Put batter in refrigerator for 1 hour.

To make minis, use about a teaspoon of dough and roll into ball. Flatten each ball with a fork, making a criss-cross pattern. .

Bake in a preheated 375 degrees F oven for about 7-8 minutes or until cookies begin to brown. Do not over-bake

Once the cookies are baked, you are ready to assemble the sandwiches!

Start by chopping up chocolate pieces. You could also try rolling the sandwiches using mini chips too.

Get your ice cream of choice ready to scoop.

I totally forgot to take a picture of the assembly, but scoop the ice cream between two cookies and roll into chocolate.

The final result!!

I made these minis for Father’s Day (hence the pb cookie..dads fav!) and they were a hit! I loved that they were so simple to eat.

Those look so good! Great pics too! My favorite dessert as a kid was ice cream in general – I had a huge bowl every single night before bed until I went to college and had no freezer :(

THE ICE CREAM MAN CAME THROUH MY NEIGHBORHOOD LAST WEEK! I got so excited (I didn’t get anything) but just the noise of the cracking music and squeaky truck flooded me with memories of childhood. I used to get the fruity ice creams, then I grew up and started getting the toll house cookies just like this!!

I have been doing something similar lately, but a bit more lazy. Instead of making my own cookies I have been buying the vegan choc chip cookies from TJ’s and some dairy free ice cream. Then making my sandwich and poppin it in the freezer for about 10min. This is my after spin or after a run treat. I love your mini ones!

Such a cute post! I love the flashback to your favorite childhood treat! I love going out for ice cream as a kid…it was few and far between. Baskin Robins is where we went…that is my memory. You can never go wrong with ice cream…or peanutbutter! In my book the PERFECT combination!!!

What a cute & delicious treat! I didn’t really like sweet things growing up (I know, I was a weird kid). In my 30s I discovered dark chocolate. It’s my treat of choice these days… :)

Ooh! This Recipe Redux Challenge sounds really fun! Thank you for sharing! I’m def interested in joining =). The mini ice cream sandwiches are soo cute!! And what do you know? I have all those ingredients on hand. Well..except for the slow-churned ice cream. I have a gallon of full-fat Cookies ‘n Cream in my freezer. I’m sure it will work just fine too, don’t you think? =)
