Refreshing Lentil Salad

Hello!  My first full work week since being on vacation is in full force and I have to say that today wasn’t all that bad.  An added bonus was that swanky boyfriend and I got to spend the morning together since he went into work l

ater than usual.  We did a good arm workout at my condo gym.  My arms are already feeling it.  Tank top weather is already here, so I need to get on it.

After an indulgent vacation, fresh and healthy are what’s on my mind for meals.  I came across this recipe on allrecipes that fit both of those just perfectly!  I made a couple modifications including not adding olive oil.  Although I think it would be good with, I tasted it before making the addition and didn’t feel it needed it

Lentil Salad (modified from Allrecipes)

Ingredients:

  • 1/2 cup dry lentils
  • 1 1/2 cups water
  • 1 (15 ounce) can garbanzo beans, drained
  • 2 tomatoes, chopped
  • 4 green onions, chopped
  • 2 minced hot green chili peppers
  • 1 green bell pepper, chopped
  • 2 red bell pepper, chopped
  • 1 lime, juiced
  • 1/4 cup chopped fresh cilantro
  • salt to taste

Directions:

Place lentils and water in a pot. Bring water to boil, reduce to simmer. Cook for 30 minutes or until tender.

In a medium size mixing bowl combine lentils, chickpeas, tomatoes, green onions, green chilies, bell peppers, lime juice, cilantro, and salt to taste. Toss well.

Chill for 20 minutes. Serve chilled.

This recipe is filled with fiber and protein from the variety of brightly colored vegetables to the lentils and garbanzos.

And can I just tell you how quickly it came together!?!  With chopping and cooking the lentils, this meal came in under 30 minutes to make.

If you are looking for more bulk, I think adding another bean into the mix (perhaps black beans) would compliment the flavors or the lime and cilantro well too.

This would be perfect as a side dish, but was just what I was craving for a cool dinner entrée.  We are in the 100 degree weather already so this dish was much appreciated!!

How this works…

It was hard to come up with one random thing since I’ve shared so many random stories with you guys over the years.  One random, and slightly embarrassing, thing is I still (try to) wear my retainers to bed at night.  I had horrible, I mean, horrible teeth growing up.  I had to first wear a retainer which led to braces, followed by a retainer.  I got a talking to by my dentist last time about the importance of STILL wearing my retainer since my bottom teeth have shifted slightly. Oops!  The boy also loved discovering this fact. Winking smile

I am with you! All I want is healthy eats, but having to clean out the pantry, fridge, and freezer doesn’t leave me with many fresh options :-/ I’m just getting by this next week! The lentils look amazing!

When I visit the dentist, I always get YELLED at for brushing too hard :(

Thank you for the nomination! That is really sweet of you :) I also relate to the retainer fact as I wore one for ages after having braces, and hated it. But then I stopped (on advice) and since then my teeth have moved a bit!! So I’d embrace the retainer pain as having some benefits if nothing else :)

Now I’ll have to think of some random facts of my own…

Glad to hear you’re settling back into work too, and this salad looks delicious!

This looks great! And the photos look amazing as well!
Oh gosh, you are making me feel a little guilty about my retainer now. I haven’t worn it in years. Sometimes I put it in for a few minutes, but then it starts to hurt so bad I take it right back out.

I have a permanent retainer on my bottom front teeth and I am suppose to wear both (top and bottom) retainers on top of that…for the REST of MY LIFE! My biggest problem with the permanent retainer is chia seed ALWAYS gets stuck there! Ok, too much information?
LOVE your salad!! Would be great ‘salsa’ with some blue corn chips?? Yea!!! YuM!!!

That salad looks great! My boyfriend loves lentils and I don’t use them nearly enough. Thanks for the nomination! Also, I still wear my retainer to bed most nights too. I rarely wear my top one though and now it’s pretty much too tight to wear so I use that as an excuse lol.

I lost my retainer about 3 months after getting my braces off. Haha. My parents were NOT very happy about that!

This is the perfect salad. I have a running social on Saturday to attend and need to bring a side or dessert. Knowing that there will be other amazing desserts there I wanted to go with a healthy side of choice instead. This looks like the perfect dish to bring and if there are leftovers I won’t feel guilty eating it all up myself later on.

I still wear my bottom retainer because it is one of the permanently attached ones behind my lower teeth. My orthodontist and dentist said to just leave it for life. No clue where my top one went to. It has been missing since middle school I’m sure.

Yup…I still wear post-braces retainers every night. I’m actually really good about it–I wear them pretty much every single night, & I’ve never gone more than 2 nights in a row without remembering to wear them.

I actually wear a mouthguard at night bc I grind my teeth so much..my husband says it sounds like I am going to break all my teeth eeks who knew?

I don’t wear a retainer but I wear a mouth guard. It’s really very sexyyy. And from reading the comments above it looks like I am not the only one! When I don’t wear it my mouth hurts so bad the next day.

BAHAHA I LOVE YOU!! I wear my retainers every.single.night. I actually get anxious when I miss a night!! I am so obsessed with my teeth that I fear them shifting when I miss a night!! I am so glad that I am not alone. I actually love the dentist..must by why I want to be a hygienist.
