Delicious Memorial Day Dessert

Hi all! I hope you are enjoying the long weekend!  I have been on a roll with my organizing, but made sure to set aside time to whip up a fabulous dessert to brin

g to my parents BBQ tonight.


What makes this dessert???  These beautiful, juicy strawberries.


Frozen Strawberries and Cream Dessert (From Pip and Ebby)


  • 1/4 cup pecans, toasted
  • 4 whole graham crackers,

    broken into pieces

  • 10 tablespoons butter, melted  (yes, this is NOT a healthy recipe)
  • 1 cup all-purpose flour
  • 1/3 cup brown sugar
  • 2 egg whites
  • 1/2 cup sugar
  • 1 cup heavy whipping cream
  • Juice from 1 lemon
  • 4 oz. cream cheese, softened
  • 2 cups of hulled strawberries, chopped


Preheat your oven to 325 degrees F. Coat an 8×8-inch square baking dish with cooking spray and set aside.  In a food processor (or a plastic bag) combine pecans and graham crackers.  Process or crush until finely ground.


Add the crumbs to a large bowl, along with melted butter, all-purpose flour and brown sugar.


Mix well.


Spread the crumbs evenly on a rimmed baking sheet lined with parchment paper.  Bake in the preheated oven for 20 minutes, stirring once half way.


Meanwhile, in a medium bowl, combine egg whites and sugar (I accidentally used brown). Mix on medium speed  (or wisk) for 3 minutes.


Add heavy whipping cream and mix on medium speed (or wisk) for an additional 6 minutes.


Add juice from 1 lemon and cream cheese and mix on low speed (or wisk) until creamy.

Coarsely chop 2 cups of hulled strawberries and gently fold the strawberries into the cream mixture.


Press half of the crumb mixture into the bottom of the prepared baking dish.


Top with the strawberry-cream mixture.


Top with the remaining crumbs.


I got a bit excited to take pictures of this oh-so-amazing dessert and it hadn’t quite set yet.

But, you get the idea.  This dessert is too pretty!  After my photo shoot, I figured I should just eat the piece only so I could give my readers my thoughts, of course. Winking smile


Delicious!  The crust and topping are what makes this!  Crunchy, slightly sweet, with delicious pecan bits in the mix.  I can’t wait to have another piece tonight when it has actually set up.  Smile

And the ingredients are cat approved. I know, very spoiled!

I also am making a strawberry dessert – but it has a ritz cracker/brown sugar/butter topping and you top it with basil ice cream – I did a test run of the dessert last night and its amazing! I’ll share the recipe on Tuesday.

My Mom, SIL and nephew and his girlfriend are coming over – we are actually doing a taco fiesta! :D Enjoy the rest of your weekend!

Oooh, this looks fabulous, Kristen! And very unique too—it’s a nice change-up from the traditional strawberry pie/cheesecake! I LOVE strawberries and cream in anything, so I’m sure I’d be all over this dessert.

Nothing says summer better than a dessert made with strawberries! And I love that your kitty loved it too…he has great taste!! I ran the Madison half in Wisconsin….was super fun! Hope yours was just as fabulous!
