Hi all! I hope you are enjoying the long weekend! I have been on a roll with my organizing, but made sure to set aside time to whip up a fabulous dessert to brin
g to my parents BBQ tonight.
What makes this dessert??? These beautiful, juicy strawberries.
Frozen Strawberries and Cream Dessert (From Pip and Ebby)
Ingredients:
- 1/4 cup pecans, toasted
- 4 whole graham crackers, broken into pieces
- 10 tablespoons butter, melted (yes, this is NOT a healthy recipe)
- 1 cup all-purpose flour
- 1/3 cup brown sugar
- 2 egg whites
- 1/2 cup sugar
- 1 cup heavy whipping cream
- Juice from 1 lemon
- 4 oz. cream cheese, softened
- 2 cups of hulled strawberries, chopped
Directions:
Preheat your oven to 325 degrees F. Coat an 8×8-inch square baking dish with cooking spray and set aside. In a food processor (or a plastic bag) combine pecans and graham crackers. Process or crush until finely ground.
Add the crumbs to a large bowl, along with melted butter, all-purpose flour and brown sugar.
Mix well.
Spread the crumbs evenly on a rimmed baking sheet lined with parchment paper. Bake in the preheated oven for 20 minutes, stirring once half way.
Meanwhile, in a medium bowl, combine egg whites and sugar (I accidentally used brown). Mix on medium speed (or wisk) for 3 minutes.
Add heavy whipping cream and mix on medium speed (or wisk) for an additional 6 minutes.
Add juice from 1 lemon and cream cheese and mix on low speed (or wisk) until creamy.

I also am making a strawberry dessert – but it has a ritz cracker/brown sugar/butter topping and you top it with basil ice cream – I did a test run of the dessert last night and its amazing! I’ll share the recipe on Tuesday.
My Mom, SIL and nephew and his girlfriend are coming over – we are actually doing a taco fiesta!
