Loaded Taco Salad

Well hello!  Thanks for all your sweet comments about the new look of my blog.   I have to admit, this weekend I would look up my blog just to take a peek!

I had another TV segment on MORE yesterday.  Unfortunately, there was a mess up with my clip but I will hopefully have it for you by the next post.

My topic for yesterday was, Is Your Spouse Sabotaging Your DietSwanky boy helped me out a bit with ideas for props, and I think we did a great job.  Here’s my little set up before going on air.

Any of you dietitian readers out there know that dietitians joke that they are  considered more “type a.”  Well, that definitely describes me.

I think I improved on this segment, but given the shorter notice and last minute switch of wording, came out the dreaded ‘um” word.  Many of you don’t know me in person, but ‘um’ is a commonly used word in my vocabulary.

In the past, I’ve had my segments pretty much memorized but this time went a bit overboard on the ‘um.’   After stressing about how I didn’t do the segment as best I could, I realized that no one’s perfect and I don’t think I did all that bad being shorter notice and only my third segment.

After my segment, working on school, and grocery shopping, I looked at up the clock and realized it was already 5 pm.  I bounced the idea of making dinner back and forth.  After seeing what goodies we had leftover from Easter, I knew just how to make good use of Tony’s mother’s homemade salsa.

Btw, I know some of you had requested a recipe so I'll make sure to get it for you.

After perusing the grocery store, I thought simple taco salads would be easy and filling.  It also may help to cancel all of the candy consumed on Sunday.

Vegetarian Taco Salads (serves 2)

  • 1 bag of spinach ( 5 ounces)
  • ½ can corn, rinsed
  • ½ can black beans, rinsed
  • 1 green pepper, diced
  • 4 tablespoons salsa
  • 2 tablespoons crushed tortilla chips
  • 2 tablespoons fat-free Greek yogurt
  • 1 avocado, sliced

If you are one that gets bored of salads easily, then this recipe is for you!  I love that with salsa and a dollop of Greek yogurt, it doesn’t even need dressing.

Attune foods sent me two different cereals to sample.  I’ve tried Uncle Sam’s cereals  before and was looking forward to trying these two out.

My favorite of the two was the Uncle Sam Toasted Whole Wheat Berry Flakes and Flaxseed.  The cereal has a chewy, nutty flavor.  This cereal doesn’t have added sugar so bananas topped onto my morning bowl added the perfect amount of sweet.  I love the little flax seeds in the mix!

Per  3/4 cup, the cereal has 190 calories and 10 grams of fiber.  I like what I see!

I’m sure your TV segment was just wonderful! I don’t think I am an “um” person, but I definitely say “like” all the time…and I cannot stand it! My food chemistry professor would go around in lab and hit us over the head with a rolled up newspaper every time we used like inappropriately…it was hilarious (and slightly embarrassing when it happened to you).

Oh that salad looks fantastic. Yep, definitely hard on myself and am super Type A. I think as long as you did the best you could do, then that’s what matters. Maybe, um, find the humor in the, um, situation ;-)

And you are so right about dietitians being type A, and I find it pretty true..but as long as that makes you best at what you do, it does not matter!

I’m kind of the opposite case – my boyfriend is the main reason I eat healthy foods. If it weren’t for him I would still be eating grilled cheese or macaroni and cheese every night :) I know that’s a common problem with a lot of couples though!

It’s definitely difficult not to be hard on yourself when you’re doing something you really care about – you just want it to be perfect! But I’m sure your TV segment was amazing – no one else notices little things like saying “um” as much as you notice them yourself!

That salad looks amazing – homemade salsa is the best! Craig’s brother-in-law makes it a lot in the summer with fresh tomatoes and peppers from their garden. I could eat it all in one sitting if I wasn’t making sure to be polite and leave some for others :-)

That actually sounds like an interesting topic. I’m single and obviously not married, but I think a spouse does influence the way you eat..
