I love egg salad. Growing up, I could never bring it school cause it was deemed one of those “uncool” foods by friends. I stuck with peanut butter and jelly, and turkey or ham sandwiches (although I was still given a hard time for having whole wheat bread).

Years later, I am proud to say I no longer am ashamed to stink up my office with the smells of onions and eggs. Nothing a little febreze can’t fix. ![]()
This egg salad recipe I came across in Self magazine is one for those mayo haters out there. Personally, I have a love-hate relationship with mayo. Years ago, I couldn’t get enough but now not so much. Instead, avocado lends a hand to provide creaminess to the egg salad, incorporating health fats in the process.

Mmm…I LOVE egg salad too! In fact, I think it may be my *favorite* sandwich ( grilled cheese is also vying for that title!).
Like you, I didn’t dare bring it to school because I knew that my classmates would plug their noses…haha! But an egg salad sandwich–or two– was almost always eaten on the weekend.
I also love deviled eggs, which I guess is the same concept, minus the bread.
It’s funny you posted this recipe today because during the past week I’ve fallen hard for the eggs + avocado combination! Last night’s dinner was a quarter avocado + a hardboiled egg and two egg whites on top of a spinach salad. I also added a dollop of mayo, but I probably could have gone without it because the avocado lent enough creaminess on its own.
Anyways…enough egg talk… This sounds like a great giveaway! I’m going to go check out SneakPeeq now! <3
Love Egg Salad too, I’ll be uncool with you. Props for bringing to work though. As much as I love egg and tuna salad I can’t deal with odor hangovers. This recipe is great.
This looks like a fantastic recipe – I love egg salad as well and need to try it with avocado!
haha, I swear my office ALWAYS smells after lunch, even if I just have a salad or sandwich! I am amazed (and grateful) at the power of febreeze
I am not an egg eater at all really, but when I was a kid, the only way I’d eat eggs was egg salad sandwiches. I made them ALL the time.
It is so funny that you posted this recipe today, because I was just looking for a mayo-free egg salad recipe! I will have to try this recipe some time! I’m looking forward to reading more of what you’ve got
So glad that you stopped by Britt!
What a great idea to sub avocado in to give creaminess! I’ll have to make this for lunches next week!
Can’t wait to see Hunger Games either! But I think I’ll wait until the theaters aren’t as crowded!
Have a great weekend!
I had to laugh about how febreze could cover up the onion/egg stink!
I am on the fence with egg salad – not a mayo fan, but love that yours doesn’t have it!
Happy Friday!
What a fabulous egg salad! I love that you omitted mayo and added avocado – brilliant idea, and I bet delicious! Thanks for sharing. Also, I’m having a great giveaway today with four potential prize winners, so you should enter!
Thanks Georgia! I just entered!
This egg salad looks so delicious!!
Thanks Alicia!
So glad you stopped by!
I love this egg salad as I’m not a big mayo fan either! And I love avocado!
I have somehow never had egg salad – but I always mean to try it because I know I’d love it! This version with avocado looks even better!
I saw Hunger Games at midnight last night. The fact that I stayed up until 3:30am tells you how much I liked it
I can’t wait to see it!!
I am hoping you liked it!
This looks so delicious! Never thought about using avocado instead. I too, have a love/hate relationship with mayo so I would probably love this. And I love egg salad too, but definitely feel ya on stinking up the office with the onions, etc. haha! Thanks for the recipe
I LOVE egg salad!!! I do use avocado and it is just transforming, isn’t it?? Soooo delicious!!!
Looks like FB version of Pinterest??
I DID sign up and the Zad Jewelry is looking pretty groovy!
Hunger Games is on my list of things to see soon…waiting for it to die down a bit.
Happy weekend!!!
I liked egg salad in elementary school, but was too nervous to bring it too. I like fried egg sandwiches with hummus…it imitates the egg salad flavor too! I’ve never tried eggs with avocado before, but I love using avocado in a mayo-free chicken salad.
I also have a love-hate relationship with mayo. I’ve even switched to vegenaise. I’m going have to try this because we love avocados! Thanks for sharing.
Thanks for stopping by Xiomara!!
Hope you enjoy the recipe!
i hate mayo and love making mayo-free egg salad myself. great idea with the croissants – looks delicious!!
I love Sneakpeeq!! I signed up and got the cutest birthday gift for my cousin! I hope it gets here in time
I looove egg salad and deviled eggs. Avocado is great in there. Hummus and greek yogurt work too!
Yes, hummus would be a great addition. Will have to remember that for next time! Thanks!
