Mayo- Free Egg Salad

I love egg salad.  Growing up, I could never bring it school cause it was deemed one of those “uncool” foods by friends.   I stuck with peanut butter and jelly, and turkey or ham sandwiches (although I was still given a hard time for having whole wheat bread).

Years later, I am proud to say I no longer am ashamed to stink up my office with the smells of onions and eggs.  Nothing a little febreze can’t fix. Winking smile

This egg salad recipe I came across in Self magazine is one for those mayo haters out there.  Personally, I have a love-hate relationship with mayo.  Years ago, I couldn’t get enough but now not so much.  Instead, avocado lends a hand to provide creaminess to the egg salad, incorporating health fats in the process.

Avocado Egg Salad (adapted from Self)

serves 1

Ingredients:

  • 2 eggs (hardboiled)
  • 1 tomato, thinly chopped
  • 1/2 avocado, mashed
  • ¼ cup onion, chopped thin
  • 1 1/2 tablesoon Dijon mustard
  • Salt and pepper to taste

Directions:

Combine hard boil eggs, tomato, avocado, onion, Dijon mustard, and pepper.  Mix well to combine all ingredients.  Serve with sliced lettuce and tomato.

This egg salad has a nice, creamy texture while the Dijon mustard adds a bit of spice.  For those of you that don’t love mayo, rejoice!  This is free of mayo, but not free of flavor.

Mmm…I LOVE egg salad too! In fact, I think it may be my *favorite* sandwich ( grilled cheese is also vying for that title!). :-) Like you, I didn’t dare bring it to school because I knew that my classmates would plug their noses…haha! But an egg salad sandwich–or two– was almost always eaten on the weekend. :) I also love deviled eggs, which I guess is the same concept, minus the bread.

It’s funny you posted this recipe today because during the past week I’ve fallen hard for the eggs + avocado combination! Last night’s dinner was a quarter avocado + a hardboiled egg and two egg whites on top of a spinach salad. I also added a dollop of mayo, but I probably could have gone without it because the avocado lent enough creaminess on its own.

Love Egg Salad too, I’ll be uncool with you. Props for bringing to work though. As much as I love egg and tuna salad I can’t deal with odor hangovers. This recipe is great.

haha, I swear my office ALWAYS smells after lunch, even if I just have a salad or sandwich! I am amazed (and grateful) at the power of febreeze :)

I am not an egg eater at all really, but when I was a kid, the only way I’d eat eggs was egg salad sandwiches. I made them ALL the time.

I had to laugh about how febreze could cover up the onion/egg stink!

This looks so delicious! Never thought about using avocado instead. I too, have a love/hate relationship with mayo so I would probably love this. And I love egg salad too, but definitely feel ya on stinking up the office with the onions, etc. haha! Thanks for the recipe :)

I liked egg salad in elementary school, but was too nervous to bring it too. I like fried egg sandwiches with hummus…it imitates the egg salad flavor too! I’ve never tried eggs with avocado before, but I love using avocado in a mayo-free chicken salad.
