Lots Of Love and Cheesecake

For as long as I can remember, my mom has always been my Valentine.

Even at 27, she still spoils me with a gift.

As I get older, the gifts are more practical (lotion instead of a stuffed animal), but still my mom always surprises my sister and I with a little something.

I love that my family has filled my life with memories like this.  It is these  little things that I will never forget.  Thanks mom! I love ya!

Ok, so not to make this post super mushy, but it is Valentine’s Day and all.  The one day of the year where mushy is totally acceptable, no?  Winking smile

And so for my new Valentine, I thought I would make swanky boyfriend his favorite dessert…cheesecake!

Now, I did make a slightly healthy change by swapping out regular flour for whole wheat,  but I will warn you that these are not healthy whatsoever.  Delicious in every way…yes!  Healthy…not so much!

Cheesecake Squares (courtesy of the Las Vegas Review Journal )

Ingredients:

  • 1/3 cup butter, melted
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup unsifted flour (I used whole wheat)
  • 2 tablespoons sugar
  • 1- 8 oz. cream cheese, softened
  • 1-  14 oz sweetened condensed milk
  • 1 – 8 oz container sour cream
  • 2 eggs
  • 1 teaspoon vanilla

Directions:

Preheat oven to 350 degrees.  Combine butter, graham cracker crumbs, flour, and sugar.

Reserve 1/2 cup mixture and press remainder into 8 inch square baking dish.

Bake 7 minutes and let cool.

In large mixing bowl, beat cream cheese until light and fluffy.

Add sweetened condensed milk, sour cream, eggs, and vanilla.

Beat until smooth (no lumps Smile).

Pour into baking dish.

Sprinkle with reserved crumb mixture.

Bake 30 minutes.  Let cool and refrigerate to keep chilled.

Then you are ready to slice and serve!  Yippee!

These are divine, sinful even.  If you are cheesecake fan, no doubt you will love these.

Feel free to slice them into large or smaller pieces.  How cute would little bite size minis be??

My mum is always my Valentine too. Even now that I am married she still gets me a valentine’s gift with of course more practical stuff then a stuffed animal. Love what you got and how cute is your valentine! xo

We are going out for a nice dinner…but that is delayed for the weekend, 3which is what I enjoy most. I LOVE your super cute swanky mom gift. Everyone needs a mama! :) And I love that you made cheese cake for your honey. I should of done that…both my boys; son and BF are huge C.Cake lovers. Now I feel bad, thanks! ;)

I have never made cheesecake from scratch, but now I may have to. Those little bites are so cute!

My mom has always been my Valentine too :-) Today she got me some Ghiradelli dark chocolate/strawberry squares. Yumm!! And since my boyfriend is far away, she made me dinner. She’s the best!

Your roses are beautiful! I got a 6 pack of beer, a pair of socks with hearts all over them, a sweet card, and a gift card to my favorite drive thru for coffee…super sweet :) Oh, and I got Peeps…love Peeps! Those cheesecake bars look SO good! I think I need to make those….!

Cheesecake!!! I used to think I hated the stuff because I assumed it was going to taste like cheddar cheese. Lame right? I didn’t take my first bite until college and from that point on I have been hooked! Happy Valentine’s Day!

Sounds like you had two wonderful Valentine’s this year-lucky you :-) Your cheesecake looks delicious. We celebrated at home family style. I made a fancy dinner with china, crystal, and silver for my hubby and kids, and we had a super duper indulgent dessert too-Peanut Butter Chocolate Chip pie. It’s SO rich, but SO good. Will look forward to your healthier recipes too!

Hey! Those cheesecake bars look amazing. I was wondering if you could substitute nonfat greek yogurt for the sour cream though?

Hi Kelsey!!
That was my first time making them so I didn’t use any substitutions. Since Greek yogurt is so similar to sour cream, I bet that would work great!!!
