Recipe ReDux:Putting P(ea) In Potluck

Hi, friends!  I’m embracing the shortened work with open arms.  I hope you all have a nice, short week ahead as well. Smile 

This month’s Recipe ReDux challenge was focused on using legumes in a party friendly or holiday dish.  This challenge was perfect for the month of December given all the parties lined up for many of us.

I decided to whip together a mango and black bean salsa for the party I attended Saturday.

If you are looking for a simple side to bring to your holiday par-tay, this would be it!

You only need 6 ingredients for this!  And the flavor is just amazing!  Sometimes less is more.

Mango and Black Bean Salsa

Ingredients:

  • 1 can black beans, drained and rinsed
  • 1 red onion, diced
  • 1 mango, diced
  • 1/2  avocado, diced
  • 1 small bunch of cilantro, chopped
  • the juice of 1 lime

Directions:

Combine onion, mango, black beans, and cilantro.

Slice avocado and add to bowl.

Combine all ingredients.

Squeeze the juice of one lime over the salsa and combine.  You are ready to go!

This was a hit at my friend’s party!! Smile  The mango adds a subtle sweetness to the salsa.

With such a short ingredient list plus the quick amount of time it took to throw together, I’ll be sure to make this again!

No need to feel guilty snacking on this side dish at parties either!  Just be sure to remove your ‘stache first!  Winking smile

I am just going to make that and eat the whole bowl. I may omit the onions add chicken stock, and puree it for the babe. She’ll LOVE it.

Ahhh…this salsa is my kind of food. It would pair perfectly with my chili-rubbed pan-seared salmon. Yum!

I love the simplicity of this dish. Agree with one of the other commenters that it is typically very hard to find fiber-rich dishes at holiday parties. this looks like a winner.

YUM!! I love anything with black beans and avocado. I also love simple easy recipes like this that only require assembly. I recently made a similar recipe that used balsamic vinegar which was a neat – and tasty – addition I thought.

I LOVE me some black bean salsa! The avocado in this one puts it over the top! I found a good turkey meatball with cilantro that I am stoked about taking for a party app! Simple and clean post…I like that tons!

That looks delicious! Definitely saving it for a New Year’s party this year.

Btw, I mentioned one time that I couldn’t pin anything from your page to pinterest. I figured out why! I use Bloglovin to keep track of and read blogs, so when I had yours open in the Bloglovin frame, it wasn’t recognizing photos. Once I got out of the Bloglovin frame it works!
