Pretty Dinner, Ugly Sweater

Hi!  Keeping my fingers crossed for a speedy work week!  We had our first weigh in today as part of our work Healthy Holiday Challenge.  I was very happy with my results this week.  

I have to say, I just love the Fitbook I’ve been using.  I’m all about organization (blame the type A dietitian in me) and this book is just that.

Looking back at this past week, I noticed that I’m quite the grazer.  I have lower calorie meals (around 300) and include higher calorie snacks (200).  It seems to work well, seeing as that I work 10 hour days.  

On the exercise front, I’d also give myself a big pat on the back.  I didn’t reach my goal of 7 days of workouts (hit snooze this a.m. versus getting up for spin Sad smile), but I’m still pleased with 5 days of exercise.

After a meat filled weekend, I gladly embraced a vegetarian meal.  One with a kick I might add.

Tofu Vegetable Fajitas (serves 4)

  • ½  package extra firm tofu
  • 1 green pepper
  • 1 red pepper
  • 1 onion
  • ½ cup spinach
  • ½ can corn (rinsed and drained)
  • 1 teaspoon canola oil
  • corn tortillas
  • cumin, hot sauce (cholula ), chili powder, and pepper to taste

My secret (and spicy) ingredients.

Directions:

After pressing tofu, slice into small squares and season liberally with cumin, pepper, and chili powder.

Add teaspoon oil to pan and sauté tofu until slightly crisp, approximately 5 minutes.

Add in peppers, onion, and corn.

Stir every so often to ensure proper cooking.  (Also, probably smart to use a larger pan than me. Winking smile).

When peppers and onions are softened (about 8-10 minutes) add in spinach.  Season pan with more cumin and chili powder.

Stir once more to mix ingredients and you are ready to plate!

Transfer vegetables and tofu into tortilla.  Top with hot sauce, cilantro, and serve!!

I really loved this dish since Mexican food is at the top of my list.  It’s very light, but filling.  Depending on how spicy you like your food, feel free to add as little or much spice as you like.

Also, make sure to liberally season your tofu.  Tofu is virtually flavorless, so this is where seasoning counts.

I have an ugly Christmas sweater party coming up!  Can’t wait!  There was slim pickings out there.  I did manage to pick up these gems at the thrift store this past weekend.

I did think the turtle neck would look great under a Christmas vest…but no luck on finding one.  Hate to admit that the turtle neck reminds me of something I wore growing up..oh and yeah, paired with leggings!  Ha.

The verdict is that they both aren’t “ugly” enough.  I may have to resort to my sweater from last yearThoughts?

What embarrassing holiday ensembles do you remember wearing growing up?

If my turtle neck outfit weren’t bad enough, I’ll never forget the Christmas my family and I went to Hawaii .  My mom, bless her heart, made my sister and I matching puff paint Christmas shirts.  Love you mom!

Haha that turtle neck is awesome. My mom once made my sisters and I wear matching hypercolor sweatshirts. Do you remember those? They were the shirts that changed color with added heat. They are weird!

My mom used to sew matching dresses for her, me, and my baby doll. I’m so serious. Haha. :) I’ve seen those fitbooks. They’re cool. But I’m so addicted to my iPhone that if I want to journal I use that.

lol…I actually think the cat sweater from last year is kindof cute!!! :) I have never been to one of these parties but It would be a blast!
Your tacos look like a nice light treat, is that specifically a tofu press that you’re using? How handy! Great pics…happy Wednesday!

Pictures are beautiful as are these tacos? The sweater- perfect for the party. Love that theme idea. Not too many ugly holiday outfits but a few haircuts I will never forgive my mother for.

I feel like my entire childhood wardrobe was leggings, t-shirts/sweatshirts with thuggish Looney Tune characters, and tops that resembled Lisa Frank notebooks. I have never gone to an ugly sweater party, but I think you’ll be quite appropriate with the red on red.

This just makes me lol cause my husband loves ugly sweater parties… in fact he’s going to make one this year inspired by the grinch’s sweater (if you haven’t seen the grinch w/ jim carrey you’ve got to watch it to see his ugly sweater)!!

That fitbook is such a great idea, I need lists and organization in my life otherwise I am a mess!! And well done on your 5 days of workouts!! Combine that with 10 hour days and you are pretty much superwoman!! :)

I love those tofu fajitas. Great idea, plus the colors make it look so mouth watering, and it screams nutritious, which for me, sometimes is a deciding factor. I like when I can feel really good about eating a meal, like when you power up in a video game, if that makes any sense.

Haha I remember puff paint!! That’s too funny, but it was pretty fitting at the time.
That skillet is about to explode! Every time I fill one up that much I make a serious mess.
I hate to say it, but I really don’t think that vest is ugly enough :)

Ah I totally wore turtlenecks like that when I was in elementary school! So much fun to dress up in a not-fancy “ugly” way as an adult!

I love reading your blog. The type-A dietitian-to-be in me relates very much to just about everything you say :-) Makes me feel a little less crazy!
