Hi, friends! Tomorrow is Friday! Can I get a big, heck yes!! I have a few fun things planned for the weekend, including dinner with swanky mom and dad and attending a session on Stumble Upon! Last night, I finished The King’s Speech.
What a great movie. My sister let me borrow it and honestly I had no clue what it was about. I was pleasantly surprised. Colin Firth won best actor for the movie, which I now know why. Great acting!!
I made this dish on Monday and have been eating it for dinner the last couple nights. It is a ‘meat and potatoes’ type of dish, but without the meat. Trust me, you won’t miss it.
I also can’t get over the deliciousness that is this marinade. It is tangy, with a bold garlic flavor. Garlic fans with sing its praises! ![]()
Tofu and Vegetables with Asian Cilantro Sauce (from Food Fitness and Fresh Air and Prevention RD) Serves 4
Ingredients:
- 1 bunch cilantro, stems removed, chopped
- 4 garlic cloves, minced
- 2 scallions, chopped
- 1/2 tsp red pepper flakes
- 3 Tbsp low-sodium soy sauce
- 3 Tbsp white wine vinegar
- 1 Tbsp sugar
- 2 tsp hoisin sauce
- 2 tsp toasted sesame oil
- 6 carrots, peeled and largely chopped
1 cup edamame beansforgot to buy- 1 lb potatoes, cut into bite-size pieces
- 14 oz extra firm tofu, cubed
- salt and pepper, to taste
- 1 cup brown rice, dry
Directions:
Preheat oven to 475 F. Cook rice according to package directions. Simmer while preparing the rest of the meal.
Line 2 baking sheets with tin foil and spray with non-stick spray. On one sheet, arrange the tofu in a singe layer. Spray lightly with non-stick spray and sprinkle with salt and pepper, to taste.
Bake for 10 minutes.
On the other sheet, arrange the potatoes and carrots.
Insert into oven with the tofu and bake for 20-25 minutes.
Combine the cilantro, garlic, scallion, pepper flakes, soy sauce, vinegar, sugar, hoisin sauce, and sesame oil in a bowl. Set aside.
Toss the potatoes, carrots, edamame, and tofu with the sauce. Serve over brown rice.
Again, I can’t say enough good things about this dish. It is hearty and full of flavor.

I have yet to watch the King’s Speech, but is on my must see list. And garlic is my favorite ingredient when I’m cooking. I always have garlic in some form in my kitchen.
Love garlic, yes! And, cilantro too! My parents lent me The King’s Speech but I haven’t watched it yet-need to get on it! Looking forward to Friday too…it is girl’s night out to celebrate my b-day plus two other friend’s b-days

WoW! I have never seen that movie, and it totally looks like my type!!! I’m seriously looking it up. And I’m a garlic FANATIC!! Sometimes I eat so much that I have serious breath issues!! Lol
Love the marinade/sound of that marinade too and I wouldn’t tell anyone if you bathed in it. I would skip the tofu though.

ive never done rice, tofu and potatoes and carrots…. for me I think it would be starch overload BUT yours looks delish, that asian cilantro sauce especially. I might try it with tofu and rice and some other veg.p.s- all my friends are reading hunger games now. haha.

It is quite a lot of carbs! I definitely think you could leave out the rice. I’ll probably do that next time.

No, I have not seen the King’s Speech. I have made that recipe before though (via Prevention RD) and it was amazing!! Loved it. Other than overcooking the tofu, it was perfect. Hope you have a great weekend

Mmmm looks so good! I’ve only had tofu once and it was plain & squishy…and from my dining hall’s salad bar (so probably not a good place to try it from). Now I’m always afraid to try tofu again because I have that bad association with it, but I guess if you make it right, it’s good!
It definitely helps to season it. I love marinating it since it’s pretty flavorless on it’s own.
Hopefully you give it a try again..I think you’d like it when prepared in a different way.

I’ve saved this for the week. I’m in one of those moods where I’m tired of eating the same old chicken, salmon and pork. The husband isn’t keen on tofu, but I’ll be with all the flavor you’ve packed into this dish, he’ll not complain.
YUM! I am a huge garlic lover. I have not seen that movie. However, I have a list of ones I need to watch – so I will add this one to it and watch it over Christmas with my family! Thanks for the suggestion as I stink at deciding what new movies to see!

This looks delicious! So many people diss cilantro, but I’m from New Mexico, so we put it in everything. (Between the spiciness and cilantro love, my Vietnamese friend and I always say we have the same palate.) Bravo!
