French Onion Soup-Revisited

Hi, friends!  I’ve got another soup recipe for you today.  With black bean, roasted tomato, and today’s French onion,  I’m on a soup-making roll! Winking smile  I actually made this recipe about a year ago, but it’s deliciousness deserved a double post.

After looking at that post, my friend commented on how far my pictures have come.  Made my day!

I absolutely love my crock pot.  It is, hands down, the most used appliance during the colder months.  I came across this recipe on a blog dedicated to just that…crock pot recipes.  Genius, I tell ya!

Crock Pot French Onion Soup (based on this recipe) serves 4

Ingredients:

  • 2 cans of low sodium beef broth
  • 3 tbsp butter
  • 2 yellow onions
  • 1/2 T granulated sugar
  • 1/4 cup dry white wine
  • 4 slices french bread
  • swiss cheese (although gruyere would work great)

Directions:

Heat your crockpot to high and plop your butter in to start melting

Add sliced onions to pot.  Break up the onion slices with your fingers, and rub them around in the melted butter

Add the beef broth, sugar, and wine.

Cook on high for 6-8 hours or low for 10-12 until onions are translucent and pliable.  That’s it!

To serve:

Pop a couple pieces French bread in toaster or broiler.  Put in mug.

Ladle soup into mug.  (yummm)

Top with cheese and put in broiler to melt.

Then grab your spoon cause you are ready to eat!

This soup is just fabulous!  I can’t sing it’s praises enough!

The melty cheese just takes it over the top!

Make sure to get a taste of bread, cheese, and soup with each bite!

The only thing…I would recommend slicing your onions real thin.  I had a bit of a crying spell while slicing and therefore didn’t slice thin enough.  It resulted in a few really big onion-y bites.  Still delicious, but more of a mouthful than I would like. Winking smile

I watch tv when I eat all the time. It is a bad habit E and I have so it’s not just because you live alone! I like the challenge though I wonder how long we would stick to it. Sad right??

I have never ever had French onion soup. And we are bad about watching tv while eating. Sometimes I try to mandate that we eat at the table. It’s so much more relaxing and we actually visit and catch up rather than just stare at the tv.

I get very lax on my vegetarianism when french onion soup is involved. Vegetable broth just isn’t a proper substitution!

I don’t eat much meat these days, but like you said, you really need beef broth for this soup!
I did come across a vegetarian French Onion Soup..if I give it a try, I will be sure to let you know how it is.

I did the same thing the other day! The onion was killing me so I just stopped chopping and ended up with big chunks haha. We need those onion goggles!

I heard that soaking the onions before helps take out the sting. I should give that a try!

I should try this! The only time I’ve ever had french onion soup was on campus…and that shouldn’t even count, being that there’s no bread or cheese when you’re just scooping it out of a big vat at the dining hall. Over-salted onions in broth. Bleh.

Yours is the second French onion soup recipe I’ve come across today! I LOVE French Onion soup, and fortunately my dad makes huge batches (follows Julia Child’s recipe) and gives me his extras :-) A crock pot is on my Christmas list this year, but my favorite kitchen appliance has to be my coffee maker. Um are you reading my mind? I LOVE french onion soup and was just thinking how I should make some. Nice recipe! Yum yum yum.

Yes I do occasionally watch TV and eat – I stopped doing it for awhile bc I think we should focus on one thing at a time and not mindlessly wander BUT I don’t mind doing both once in awhile!

fav kitchen appliance– hmm — my keurig but before that it was my crock pot of course!

I made this before I left for a very cold football game and was so happy when I came home to a delicious aroma wafting from my kitchen. Wonderful soup!
