Not Like Mom Used To Make

Growing up, my mom would always make homemade soups during the winter months.  Chicken noodle, split pea, and various bean soups would fill (and warm) our tummies.  The one soup that I don’t remember my mother making though was tomato.  Perhaps it wasn’t a family favorite, I’m not quite sure.

I started eating tomato soup when I was older, but didn’t realize how much I loved it until enjoying a bowl aside an ooey, gooey grilled cheese sandwich at the restaurant, Yard House.

The soup was rich, flavorful, and dipping the grilled cheese filled with cheddar, gorgonzola, swiss, and fontina, was one of the best flavor combinations I’ve ever tasted.   Although my grilled cheese is not quite comparable (another post for another time perhaps Open-mouthed smile), this recipe for tomato soup is indeed a keeper.

Roasted Tomato Soup (courtesy of Smitten Kitchen)

Serves 4 (though closer to 6 if served in mugs)

Ingredients:

  • 3 pounds plum tomatoes, halved lengthwise
  • 2 tablespoons olive oil
  • 2 large or 4 small cloves garlic, unpeeled
  • 1 teaspoon finely chopped fresh thyme leaves or 1/4 teaspoon dried
  • 1/4 teaspoon (or more to taste) dried crushed red pepper
  • 4 cups chicken or vegetable stock

Directions:

Preheat oven to 400°F.  Wrap garlic cloves in a tight foil packet.  Place tomatoes, cut side up, on large baking sheet.  Sprinkle generously with salt and pepper (I used 1 full teaspoon of Kosher salt). Drizzle tomatoes with olive oil. Add foil packet of garlic to tray.

Roast until tomatoes are brown and tender (garlic will be very tender), about 1 hour. Cool slightly.

Unwrap garlic packet and peel cloves.

Transfer cloves, tomatoes and any accumulated juices to a blender or food processor and pulse machine on and off until tomatoes are a chunky puree.

Transfer tomatoes to medium pot and add thyme, crushed red pepper and stock and bring to a boil.

Reduce heat to a simmer and cook, uncovered, for 25 minutes.  Remove from heat and adjust seasonings to taste.

This soup was fairly simple to make.  You just need a few hours in the kitchen.  Definitely worth it!

The original recipe recommended a cheese and bread topper, but I think the grilled cheese worked just as well.

I made sure to dip the melty cheese into every bite of tomato soup goodness.

As for the soup…oooooo yeeaaaahhhhh!!! What a great comfort combo for the fall months, although in Vegas I’m not sure you are as cold as I am!

Funny enough, I too make a ton of soups and haven’t done tomato love that garlic/tomatoes are roasted.

This soup sounds amazing. I will be making it. I’ve made tomato soup with canned tomatoes and it’s just packed with sodium. This sounds so much better!

That soup looks fantastic. The only tomato soup I remember as a kid came from a can. So I never thought I liked it to be honest. But then I realized that real tomato soup is another story – and it’s funny b/c I don’t really like tomatoes.

Mmmm that looks simply amazing!! I think I might improvise (cheat) tonight with tomato soup of the tinned variety… There is some lovely gouda in the fridge calling my name! :)

My mom used to make tomato soup and grilled cheese for me too. Of course, it was Kraft American slices and Campbells soup, but it was still delicious!

Love, love, love tomato soup!! Thanks for the recipe – I actually would put about 2 ounces of stale bread in my tomato soup while it cooked so it was a bit thicker. Yumz with grilled cheese!

This.Is.Awesome. Growing up I always had grilled cheese with out any soup. When E and I met he demanded we have tomato soup with our grilled cheese sandwiches and lemme tell you – this recipe trumps the out-of-the-can stuff we had by far!

I love tomato soup – this would be a great recipe to make in the summer with all the fresh tomatoes and freeze for the winter.

Tomato soup and grilled cheese is the best combo out there – the ultimate comfort food!

Somehow I’ve never had tomato soup, despite loving all things tomato: tomatoes, tomato sauce, salsa, etc. Maybe it’s because I’m never been that into grilled cheese? Hmm..

I love tomatoes, and tomato soup is one of my favorite soups! I actually make it a lot when we have our own tomatoes (and it is technically still too warm for soup…). Your soup sounds wonderful! Roasting veggies and then making a soup adds so much flavor!

I had grilled cheese and tomato soup for lunch the other day!! SO delicious.
