Breakfast For Dinner

Hi, friends!  I’m so glad the weekend is almost here.  I’ve been feeling very overwhelmed lately.  I don’t deal well with stress and lately feel as if I’ve taken on more than I can handle.

Given all the craziness lately, I’m trying to remember to still take time for me everyday. I’ve been getting in a quick run at lunch (we’ve had some cool temps in Vegas this week), and even treated myself to a facial Monday. 

There are still times when I feel so stressed I’ll often times pass up the workout even though I know deep down it will make me feel so much better.  I’d love to hear your suggestions for managing stress!

If anything, blogging keeps me going and continues to put a smile on my face everyday!  Open-mouthed smile I know I don’t say it enough but I’m so thankful to have such fabulous readers.  So a big hug to all of you guys!

Dinner last night was definitely stress-free, but not as I had planned.  Swanky sister brought over pizza!!  Free and delicious (thanks sis), but I put off the original dinner I had planned to make.  I figured why not give it a go for breakfast..it does have eggs.

I honestly should just direct you to Iowa Girl Eats, since the majority of the meals I make are hers.  I just can’t help but love her simple, but hearty, meals.

This morning, I whipped up her recipe for Caprese Baked Eggs.

To make the baked eggs caprese style, layer:

  • Chopped tomato
  • Basil
  • Finely shredded mozzarella cheese
  • Pepper
  • 2 eggs
  • One more go of tomato, basil and cheese
  • Final sprinkle of pepper

Directions:

Bake the eggs for 8 minutes at 350 degrees, until the sides are set, then turn the broiler on and let the eggs cook for about 2 more minutes until the center is set.

I didn’t have fresh basil (I know, the horror!!), but dried still did the trick.

This was excellent!  I am always looking for new ways to cook eggs and this will now be in rotation.

With a piece of crusty bread for dipping, of course!

The cheese is melty, the eggs are a bit runny.  You need to make this dish.  This dinner, err.. I mean breakfast, will get me through my Friday easily, I’m sure of it!

Other Swanky Scoop:

My friend’s wedding is coming up in a couple weeks. I asked my sister to help me do my hair.  She messed around with it a bit last night, but I’m still not 100% sure what I want.  I found a few ‘dos on pinterest that I like.  What do you guys think?  Any favorites?

keep a google calender. as for the hair, GO WITH THE BRAID!!! Oh, and use a crapton of product, but soft product. you’ll look fab.

Good for you for getting in the runs and facial though. Sometimes the most important thing is to remember to do something for yourself. I always find that getting in a workout is a pretty good way to de-stress.

Ahhhh yes know that feeling!! I’ve been overwhelmed lately too. I love to blog but I’ve had to cut down on how many times I post and read other blogs!!
It’s good to simplify… that always makes it better!! Here’s to balance <3

The caprese bake looks AWESOME! I forgive you for not using fresh basil…this time. haha nothing like it!

I have that recipe starred in my reader! It looks so delicious. I deal with stress by taking it one day at a time and literally writing out a list each day. For some reason this helps me.

I love the braid hairdo, my vote is with that one! And I am well aquainted with stress; I find my best way to cope is to organize my brain by writing out lists of everything I need to take care of, just like Caitlin above. I have an agenda that I take with me everywhere and I jot down every little thing in it, I don’t know what I would do without it!

Thanks so much! Yeah, I am the queen of lists!! Usually once I get started on a project, I start to feel better. I think I just need to dive into a project and I’m sure I’ll feel better.

I’m the queen of feeling stressful lol. I also make lists for everything and just remind myself that I’m only human, not super-human haha

Hmm, tips…breaking down your to-do list into even smaller tasks! I’ve started doing that and it works wonders!

Also, I recently found the concept of a “Ta-Da List” somewhere & have been loving it ever since. Basically, it’s a running list you add to throughout the day of what you HAVE done (even little things!). I’ve found that it makes me feel much better when I’m overwhelmed and even motivates me!

Those eggs look awesome! I think How Sweet It Is made something similar and you posting this reminded me that I need to make them!

I love the second updo – so cute! This also reminds me that the bride asked us girls to have a picture of how we want our hair to look for Saturday to give to the hair dresser…and I am yet to do that. I wish my hair were longer so that some of those were options for me. Oh well! I love them all!
