I’m Glowing!

Happy What I Ate Wednesday!  I can’t seem to stop smiling!  A while back, I was asked to provide a recipe for Glow, a Canadian magazine, using one of my favorite ingredients…PUMPKIN.

I received a copy of the magazine in the mail yesterday and have been smiling ear to ear ever since!  They titled the tidbit Orange Crush, and it features my recipe for a pumpkin yogurt parfait.  I love how they layered the ingredients in the photo.  So fun!

Anyhow, I wanted to share my eats with you from yesterday in WIAW fashion, of course!

Breakfast

I seem to be a bit slow moving in the morning these days (staying up late to catch my favorite fall shows doesn’t help Winking smile), but I knew having a delicious breakfast would help move things along.

A toasted whole wheat bagel thin sandwich with eggs and cheese.  Yum!  My mom and I were talking about how we love bagel thins, but you really have to eat them toasted.

Some mornings I’m in the mood for a more savory breakfast and this one fits the bill.

Snacks

I was going to grab a fruit to snack on midmorning but spaced it, so I ended up eating my afternoon snack early.

An apple with Justin’s Honey Almond Butter (aka: crack).

So glad no one walked by as I was squeezing every last bit out of the package. Embarrassed smile

Lunch

I made the most delicious dinner Monday night, courtesy of Miss Prevention RD.   The recipe is for Orange Chicken Packets.  I was soo excited to bring the leftovers to work yesterday.   With the flavors of orange, butter, and garlic, it may seem like a strange combo, but I’m telling ya- it works!

Mushrooms, pinto beans, and orange slices also make a debut in this delicious dish.  You can find this fab recipe here.

Dinner

I went to run an errand after work and knew I wouldn’t be able to hold my hunger over (blame me forgetting my other snack).  I stopped for a pb and banana smoothie at Jamba Juice.

I am off work today!  I see lots of errands and gym time in my future.  I’ve been getting an itch to redecorate my place a bit more, so possibly a trip to Hobby Lobby and Home Goods.  Why does the cost of redecorating always add up so quickly!?!

That is exciting! Congratulations!! And my favorite way to enjoy pumpkin (besides a certain pumpkin-flavored beverage from a certain coffee chain ;-) ) would have to be the traditional pumpkin pie I eat at Thanksgiving and also these fabulous pumpkin chocolate chip cookies one of my friends makes, but refuses to share the “secret recipe” for!

Pumpkin is really the only thing I like about fall (I just can’t get over the cold!), pumpkin pies and pumpkin cream soup is my absolute fav!!

You should check out how many calories are in your favorite foods. My favorite way to enjoy pumpkin is as pumpkin pie, but pumpkin pie has 323 calories! It’s worth it, though.

Lately I’ve been making some killer pumpkin protein pancakes drizzled with almond butter and topped with one serving of fruit. Heavenly! So excited to be eating pumpkin again. :)

Congrats! That’s wonderful that they selected you to submit a recipe…and for pumpkin? Bonus :) I love the idea of a pumpkin parfait…I may have to try that tomorrow morning in my Greek yogurt!

I’m so glad you liked the orange chicken meal. I am ALL about the zero clean up! Wasn’t the meat so juicy!? I loved it!

I have to admit that I’m not very creative with pumpkin, so I add a healthy dollop to my old fashioned oats for breakfast. I add pinch of nutmeg and cinnamon and enjoy the autumn flavor.

I love redecorating once I find my focus. I tend to get overwhelmed with too many choices.

Congrats on your recipe bring featured in Glow- very cool! And, that chicken dish wrapped in foil sound terrific-definitely want to try that out! I tried making some pumpkin tofu mosses the other day-horrible failure! Perhaps I’ll stick to pumpkin pancakes and muffins :-)

Very cool! That looks fantastic yay! I need to stock up on pumpkin now. The orange chicken sounds yummy too. House decorating is so expensive, but home goods is the bomb for cute and reasonably priced things. I need to work on my work wardrobe for sure. That stuff is so darn expensive too.

I am def going to have to use that orange chicken packet recipe. It looks so good! My fave way to have pumpkin is either in oats or sweets. So yummy. I love re-decorating. It is a fun activity to me.

CONGRATS on the magazine recipe! they did a stellar job with the layering !

I had a pumpkin yogurt dip recipe submitted to a cookbook for work- such a great combo! pumpkin is much more versatile than you would think- I’ve made several recipes I love in the fall!

I’ve missed all this TV because of travel- I am catching up though- home goods is addictive and decorating does cost a pretty penny! hope you had a good day

You have an eye for style I admire, given that gene is lacking in me.
My new favorite way to eat pumpkin is in flans. Super sweet but savory. I am hosting a pumpkin cook off next week at work. Chefs bring in dishes throughout the week, and staff give $ to taste them. The chef who earned the most taste money wins. I know I am making pumpkin popcorn marshmallow balls, and pumpkin rum balls….any other suggestions?
