Peanut Butter Granola

Hi guys!  How’s your week?  I can’t contain my excitement for this weekend!  It’s my friend Kristen’s bachelorette party!  I will be sure to share our silly antics with a recap on Sunday.

Speaking of the bachelorette party…

I spent a couple hours in the kitchen yesterday making a cake of a certain body part for the occasion if you know what I mean.  It’s truly hysterical and I can’t wait to show the bride to be!

I also plan on making these darling jello shots in strawberries.  I know, in strawberries!  Isn’t that just the cutest idea!?!  How did I ever get by without Pinterest before, I’ll never know.

Since I had the oven on, I decided to make a recipe I found at Peanut Butter Fingers for peanut butter granola (say that three times fast Winking smile).  This recipe in three words is to. die. for.  If you like peanut butter, you’ll love this recipe.

Peanut Butter Granola (from PB Fingers)

serves 4- 1/4 c. servings

Ingredients:

  • 2 tbsp. creamy peanut butter
  • 2 tbsp. honey
  • 1/4 tsp. cinnamon
  • 1/4 tsp. vanilla extract
  • 1 cup oats

Directions:

-Preheat oven to 325 degrees.  Spray cookie sheet with non-stick cooking spray and set aside.

-Combine peanut butter and honey in a bowl and microwave until peanut butter melts (approximately 20 seconds). Stir.

-Stir cinnamon and vanilla into peanut butter and honey mixture.

-Add oats and stir until oats are completely covered in peanut butter mixture.

-Spread out oat mixture onto prepared cookie sheet and bake for 7 – 8 minutes until granola is slightly browned.

-Let cool until granola is crunchy.

I loved that it had a slight hint of sweet from the honey, but definitely not overpowering.  Of course I couldn’t get enough of the peanut buttery taste in each and every bite.

Since I was eating handfuls straight out of the container, I thought I should try and eat the granola in a more civilized manner.  I topped some on my yogurt today at lunch and it was just delicious!

Crunchy, chewy, and bursting with flavor.

At my friend Bachelorette party someone made banana pudding shots they were amazing and everyone went crazy over them!!

OMG for my sisters bachelorette I put my little sis in charge of making the “cake of a certain body part”. It was so hilarious. It was actually quite disturbing how good she did haha.

granola is seriously my weakness! Love the stuff! Too bad it’s so high in calories per portion! I could eat a lot! This looks awesome!

I always throw globs of peanut butter onto my granola so I don’t know why I haven’t got round to making peanut butter granola yet?! This looks amazing! Heres my favourite recipe, can’t stop eating the damned stuff! :)

I like granola but don’t really eat it too often. I buy Cascadian farms. I really like their dark chocolate almond one and cinnamon raisin one (although I take out the raisins because I think they’re icky :) ).

The peanut butter granola looks amazing! I make a similar granola every once in a while as a special treat, but on most days when I need my PB & granola fix, I grab a Kellogg’s FiberPlus(R) Chocolatey Peanut Butter bar. Not quite the same, but still tasty.

I LOVE granola. I buy the Nature’s Path Flax on occasion. But sometimes just mix in oats, maple syrup and raisins ;) – this looks delish!

Fun weekend, and love those strawberry jello shots! Your peanut butter granola sounds delicious- thinking I might need to make some for my kids first day back to school b-fast tomorrow. For store bought granola, I really like Love Grown Foods-yum!
