A Taste For Tofu

Hi all!  How’s your week?  It was a bit weird not having my midweek break since switching to Mondays off.  At the same time, it will be worth it to have another three day weekend. Open-mouthed smile

My coworker bought a new cookbook and let me flip through it the other day. The cookbook is from Cooking Light, Way to Cook Vegetarian.  I was excited to thumb through it since I’m always looking for more creative vegetarian recipes.

I’ve made many tofu recipes on my blog, simply because it’s inexpensive and easy to work with.  I guess you could say this was a new take on an old favorite.

I pressed out my tofu using my tofu xpress the night before.  This thing is great!

Peanut Crusted Tofu Triangles (courtesy of Cooking Light)

Ingredients

  • 1 (14-ounce) package firm tofu, drained
  • 1 teaspoon salt, divided
  • 1 teaspoon water
  • 1 large egg white
  • 1/3 cup dry-roasted peanuts
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon crushed red pepper
  • 2 teaspoons peanut oil, divided
  • Cooking spray

Directions:

Combine 1 teaspoon water and egg white in a shallow dish. Place peanuts in a food processor; process until finely ground.

Combine ground peanuts, garlic powder, ginger, red pepper, and remaining 1/2 teaspoon salt in a shallow dish.  Dip one side of each tofu triangle in egg mixture. Dredge the same side in peanut mixture.

Heat 1 teaspoon oil in a large nonstick skillet coated with cooking spray over medium heat. Add half of tofu; cook 2 minutes on each side or until browned. (Watch closely to prevent burning.)

Repeat procedure with remaining 1 teaspoon oil and tofu.

I loved this dish. The tofu was crisp and had a delicious brown crust.

I don’t often cook with peanut oil, but I’m going to start!

You could really taste the flavor of the oil in this dish, and I just used a teeny bit.  I honestly don’t know what I would do if I couldn’t eat peanuts.  I love them in every way possible.  Smile

I absolutely LOVE that cookbook. I’ve made several things from it and they have all been delish! Loved the Help too! Read it in a week!

I am a massive peanut fan! Can’t get enough of them ESPECIALLY in butter form! :) Can’t get my head around tofu though, something about the texture I think although it could just be that I’m not preparing it properly! :/

I read “The Help” about a month ago, and I’ve been waiting on pins and needles for the movie to come out. I the one who loves the book more than a movie, but like seeing the “real life” version on the big screen as well. I am so glad you’re enjoying this book!

I still haven’t read The Help, but it’s on my list of books to read this year! :)

I’m really not a peanut fan. I don’t even really like peanut butter that much. But I do love tofu! I usually cook mine with olive oil and Greek seasoning or salt.

I LOVED The Help. It’s over 500 pages and I read it in three days. I couldn’t wait to get home from work and curl up with it!

I think that Tofu recipe looks awesome. It reminds me of the deep fried tofu triangles often featured at Thai restaurants, but I’m guessing it’s LOADS healthier.

You are yet another person from whom I’ve read positive reviews of the Tofu xPress. I may need to get one. Because the stacking plates and cans on top of the block, just isn’t doing it!

I bought that cookbook for my Goddaughter recently, and she really likes it. The tofu with peanuts looks really yummy! Just bought a new book to take on my rafting trip. It’s The Help :-) . Have a wonderful 3 day weekend! Your pictures look great BTW!

Okay… so I’ve never seen that tofu press. Cool.

I’ve been wanting to try the NuNatural Stevia products… I’ve seen them mentioned a lot on Lisa @ HealthfulSense’s blog. Can’t wait to see what you think!

My new fave summer drink is to take a lemon-lime sparkling water (I always get LaCroix), put about 6 drops of stevia in & a small lime wedge… directly in the can. It’s like, healthy Sprite ;-)

I love mine! It’s much easier then finding all kinds of random things around my house to weigh the tofu down. ;)
