Hi! How was your weekend? Mine feels longer than usual.
I switched my regular day off at work from Wednesdays to Mondays starting this week. 4 ten hour days in a row might be tough, but I think I’ll enjoy having a 3 day weekend.
My friends and I had our book club meet up to discuss One Day, by David Nicholls. I’ve been slacking on making home made goodies. I stepped it up and made a delicious apple crisp.
I got the recipe from a blogger and fellow RD I truly adore, Prevention RD.
Apple Crisp (courtesy of Nicole)
- 4 cups of apples, peeled, cored, and diced
- 2 Tbsp sugar
- 1 tsp cornstarch
- Juice of 1/2 a lemon
- 3/4 cup old-fashioned rolled oats
- 1/2 cup whole wheat pastry flour
- 1/2 cup brown sugar
- 1 Tbsp + 1/2 tsp cinnamon, divided
1/2 cup (1 stick)1/3 cup50/50 Smart Balance Blendbutter, cold, cut into pieces
Directions:
Preheat oven to 375 ° F.
Place apples in baking dish.
Sprinkle apples with 2 tablespoons granulated sugar. Combine lemon juice and cornstarch and stir until smooth. Pour over apples and toss together gently. Sprinkle apples with 1 tablespoon of cinnamon. In a medium bowl, combine oats, flour, sugar, and remaining 1/2 teaspoon cinnamon.
Cut in butter using a pastry blender, forks or your fingers until it resembles coarse crumbs. Top apples evenly with crumble mixture.
Bake about 20-25 minutes until bubbly and topping is lightly browned. Cool about 5-10 minutes and top with vanilla ice cream, if desired. Serves 8.
This dessert was a hit!! We had a bit of rainy weather today in Vegas, so it was the perfect complement.
Anyway, back to the book. For the most part, we all weren’t in love with it. Mainly the two main characters, Emma and Dexter. I don’t want to say too much else without spoiling it. ![]()

The movie for the book is set to come out in August. It‘s starring Anne Hathaway and Jim Sturgess. Even though my feelings are mixed with the book, I’d still like to see the movie.
We had our first male edition to book club…my sister’s cat Ned. He sat with us, but for some reason didn’t want to join in the discussion. ![]()
Food, food, and more food!!
I had a bit of everything on my plate. Gosh, went a bit crazy with the spinach dip there didn’t I. ![]()
I loved every delicious bite.
I also had a glass of wine with lunch..dinner..or do you call it linner??
And for dessert..apple crisp and chocolate cake. I definitely splurge when I go to book club. Thankfully, we only meet once a month.

The weekend felt long for me too. But for me it was probably because I had less going on than usual.

Such a pretty dress! I think curling your hair and putting it in a low side ponytail would look really good. That way it is still sort of “down”, but you also get to show off your back and shoulders in the strapless dress! (okay girly comment of the day over with) – RD focused comment: Need to make that apple dessert!

You look absolutely beautiful in that dress; it’s very flattering. And yes, I’ll vote for hair down. I had noticed the book “One Day” a few times in Target and almost picked it up. I’ll take your book club’s advice and wait for the movie. If that main characters are an issue, then the book is going to be a little tough to get through.

Yep, a good spinach dip is hard to stay away from. LOVE the dress – you look beautiful – even without the makeup!
Pin your hair up…you’ll look sexier. But because it can also look a bit bare around the collar bones, wear a nice dainty necklace.
The crisp looks yummy! Funny, I looked at that book in Costco yesterday and almost bought it, but decided against it. I’ve heard grea things about The Help though. Great dress!
