Lemony Salmon Burgers and Winner

I thought today’s meal should go with the giveaway. Lemony Salmon Burgers.

This recipe is straight off of the Pure Alaska Salmon Company’s website.  They have a slew of other delicious recipes!

Lemony Salmon Burgers

Ingredients:

  • 2 – 7.5 oz cans Thinkpink and/or Redhead, drained, mashed & mixed including skin and bone
  • 2 eggs, beaten
  • 4 tbsp finely chopped parsley or 1 tsp dried parsley
  • 1 large lemon, juiced and zested
  • 3 TBSP garlic, minced
  • Shake or two of hot sauce, to taste
  • ½ cup dry, fine bread crumbs
  • Salt and pepper to taste

Directions:

Combine ingredients, shape into four cakes.

Heat frying pan on medium, when hot add small amount of oil. (I used cooking spray)  Cook 5 to 7 minutes on one side, then turn, cooking 3 to 5 minutes more or until nicely browned.

Simple!  Soo Simple!  And can I just tell you how much I love Panko bread crumbs.  This is my first time trying ‘em out.  Yum!

I ate it similar to the way you would a salmon cake.  So good it didn’t need a bun!

With some greens on the side.  This dish was tasted light and I loved the hint of lemon.

When it comes to seafood, I am pretty picky.  I really liked these! I can’t wait to try out more recipes from their site.

Not fishy? EA would love to hear your Gfree salmon experiments too. I love the name “Redhead” on the can. I poached wild salmon last night. Good recipe.

I am not a salmon person but those do look great! Last night was it was 70 degrees in Chicago (which felt cold!) so I had a bowl of minestrone soup when we went out to dinner. Soup in summer?!?! Yes please!

MMM…..salmon and lemon? Yum. We had take out thai food last night because we both got home late. NOT the healthiest dinner by far, but it WAS good. Hope your Friday is a good one too Kristen!!

Thanks Kristen and Pure Alaska Salmon! I am really looking forward to trying the salmon out and am happy to report back with my taste testing results :-) I’ll have to give these lemon salmon burgers a try too!

Love the dash of hot sauce in your recipe. I love canned wild salmon. It’s often more affordable for families when made into burgers like these. Have a good week!
