Can’t Get Enough

I’ve been on a serious curry kick lately.  I don’t know what it is about the deliciousness that is curry, but I can’t seem to get enough.  This week’s dish was no different.  I say this week, because I made this dish Sunday and have eaten it over the course of the week.  I wish I could, but I can’t take credit for this recipe idea.  My coworker who is a brilliant cook, whipped this up this gem last week. She left work early, and let us take dibs on who got her lunch.  Well, we all decided to split it since it looked too good!

Tofu with Spinach and Potato in Curry Sauce

Ingredients:

  • 1/2 cup vegetable broth
  • 1/2 cup light coconut milk
  • 1 1/2 tablespoon curry paste
  • 1 package (pressed) extra firm tofu
  • 1 large potato (boiled and chopped)
  • 2 cups spinach

* I did eyeball the sauce, so feel free to add more or less as you go along. Winking smile

Directions:

Start by warming broth (used my broth cubes) and add coconut milk and curry paste to pan. Simmer for about 5-8 minutes.

In other pan, sauté pressed tofu until slightly brown.

Combine tofu, potatoes, and sauce, and simmer for about 2-3 minutes.

Top tofu and potato mixture onto bed of spinach. The heat will slightly wilt the spinach.

Next time, I want to make a bit more sauce, but this recipe was delicious! If you’re a curry lover like me, you’ll just love this!

Movie Night

I watched the documentary King Corn last night.

Here’s a summary from wikipedia:

“The movie follows college friends as they move from Boston to Greene , Iowa to grow and farm an acre of corn. The film shows how the perception of industrialization in corn has all but eliminated the image of the family farm, which is being replaced by larger industrial farms.

As was outlined in the film, decisions relating to what crops are grown and how they are grown are based on economic considerations rather than their environmental or social ramifications. This is demonstrated in the film by the production of high fructose corn syrup, an ingredient found in many cheap food products, such as fast food.”

What I found to be devastating was where they discussed cows being fed a corn based diet. The cows can only survive a certain period of time before getting sick due to a diet of corn, not grass. Although I don’t eat much meat, it only reinforces my thoughts on buying grass fed beef.

It also amazes me how corn is in everything we eat!  Meat, desserts, packaged foods, drinks…you name it.  Eating from the ground up has never sounded so good.

I love curry too, I think I crave more spice in the hot weather (mexican, indian, thai). Haven’t seen king corn, I want to though.

Can’t wait to hear about the photo class. I’m always trying to improve my photos.

Curry – one of my fave Thai restaurants from a few moves ago had a simliar curry dish that also had long beans & basil added to it. I may try yours, double the sauce & do these add’ns.

Now I’m hungry!

How have I never even heard of this documentary!? I loved Food, Inc. so I know I would love that one, too. I only buy grass fed beef. It saddens me, though. In the Midwest, I drive through a LOT of country/farming communities and they advertise very proudly that they sell GRAIN fed beef. My heart aches a bit every time I see that. When I lived in Tulsa, many of my patients were ranchers. Every single one I asked about grain vs. grass fed looked at me like I was BANANAS. They all grain fed. When it’s your living, you want to make more, of course. And cattle are sold by the pound. Why get a 500 lb cattle when you can get it to 1,000 by feeding it corn that the GOVERNMENT pays for?! Soap box, can you tell? :(

I was so shocked even when they discussed that farmers lose money if they don’t have the government pay them for the corn as well. So sad.
You will really like this documentary if you enjoyed Food, Inc.

The curry looks so good!
I haven’t seen King Corn…one of my faves is Food Inc- I think almost everyone I know has seen that one by now!
I also love the book Fast Food Nation- super informative, though it is a little old now.

I have to see this movie I hadn’t even heard of it. I am so grossed out and saddened when it comes to corn fed cattle. Whyyyyy is this even acceptable?

I do that too often. Make something at the beginning of the week and love it so much I eat it every night for dinner. And for lunch. and sometimes find ways to sneak it into breakfast and snacks. :-)

I’ll have to check out that documentary. Looks very interesting.

THAT’s! It! I have not had curry paste in over 2 years….wow. I guess that revelation hit me a bit hard in the tummy….maybe I should do a swap soon? Thanks for the salivation factor…

and I’ve seen the film and thought it was a bit dry at times, but was surprised to learn how much corn we make, and don’t eat.

If Anthony Bourdain counts…he’s my guy.

omg girl…dont get me started! lol…I have yet to see this movie (I totally want to!) but the ramifications of how irresponsible our food system has become is super scary. But on a happier side note I LOVE fresh corn. I live in CA now but I grew up in PA. Right down the street from my parents was a huge corn farm. There was nothing like fresh sweet corn in the summer. So good!!

I *love* curry as well, although I haven’t had it in months. Usually when I taste curry I go on a multi-week kick where I must have it all the time as well. In fact, I am craving it now lol. Thanks a lot!

Food, Inc,. is great. So is Crazy Sexy Cancer (MUST watch). Never seen King Corn. On my list now.
