Recipe ReDux- Grilling

Hi friends!

I’ve been anxiously waiting to hit publish on this post. Why the excitement one might ask? Well, it’s my first recipe in a monthly series called Recipe ReDux.

“The Recipe ReDux is focused on taking delicious dishes, keeping them delicious, but making them better for you. As the Latin term “redux” means to revisit or reinvent, we are reinventing the idea of healthy eating with a taste-first approach. We aim to inspire the food lover in every healthy eater and inspire the healthy eater in every food lover. “

This month’s theme is grilling. Grilling and summer go hand in hand, in my opinion. My recipe is a healthier take on the traditional burger. Don’t get me wrong, there are ways we can cut fat and calories on our traditional patty. Why not take it a step further?

I knew just what recipe I would showcase. It’s simple, healthy, and hearty. Portabella Mushroom Burgers with Grilled Corn.

You really can’t beat the flavor that comes from grilled vegetables. They need a simple dusting of olive oil, sprinkle of salt, and pepper. You throw them on the grill and let ‘em do their thing.

Since portabella’s are a hearty mushroom, you really don’t miss the meat. Besides being low in calories, portabella mushrooms are also a great source of potassium, selenium, and fiber.

I grilled up lots of goodies including squash, green and red peppers, and onion.

Last but not least the mushrooms and corn went on the grill.

Then you are ready to assemble…mushroom, peppers, squash, onions. Top if off with a sprinkle of goat cheese and a soft whole wheat bun and you’ve got one good lucking burger.

I think goat cheese pairs so well with the vegetables on this sandwich.

For something different at your summer barbeque, why not try portabella mushroom burgers instead of your traditional burger.

Incredible looking sandwich. Totally up my alley. I love grilling pretty much any veggie. Grill broccoli is awesome. I think my fave veggies grilled are corn, squash, & asparagus.

I’ve been wanting to try portabella burgers, but I can’t get past the HUGE mushroom thing. I have an irrational fear of mushrooms haha. I’m totally serious. My favorite grilled veggies are red peppers and squash.

Haha! I used to be the same way! My mom still makes this sauteed mushroom dish that I still don’t like.

On my roasted corn on the grill, I like putting soaked mesquite chips on top of the coals, and then at the end, rubbing them with rosemary butter and putting the husks on the grill for another 10. Your life is SO colorful…

I loved grille portobello mushrooms!!! We don’t have a grill at the moment, but I have seen sooo many delicious grilling posts lately, and I want to run out and buy one right now!!! :) Wish I could make your burger for dinner!

Yummy! I love portabello! I FINALLY bought a grill a couple a weeks ago and wouldn’t ya know – I got food poisoning the first time I grilled out. :-( Since then I’ve associated my grill with a horrible night in the bathroom (plus 3 days of eating crackers to recover) so I have yet to try again. I love the grill. I love grilled food. So I need to get over the getting sick thing, stay far away from chicken, and give it a 2nd go around.

That burger looks great. I LOVE portabella for their versatility. You can literally do anything with them: make them the bun, make them the main dish, stuff them, bake them.. you get the idea. ;)

Honestly… even though I like a good burger every now and again, I would choose this every single time over a burger on the grill! Something about grilling veggies just screams “get in my belly!” ;-)

I am not a fan of regular mushrooms, but have yet to try portabellas, which people say taste “meaty.”

And goat cheese with anything is perfect! Since I grill a lot, I don’t really have a favorite, but fall of the bone ribs are always good. :D

For sure looks much healthier than my mushroom, onion and bacon burgers :) I must say you have always impressed me with your healthy delicious cooking and the new ideas you come up with. Keep up the great work hope that the rest of your week has been stress free :)
