Let me paint a picture for you.  My roommate comes in the door last night and walks in the kitchen to greet me.  She sees me cooking away; while at the same time making the biggest mess.  She lets out a giggle and states, “I would’ve never thought you’d make such a mess in the kitchen from the looks of your blog.”

We both had a good laugh.  I seriously am like a tornado in the kitchen. I use numerous bowls, spatulas, pots, and pans…and there are spills everywhere!  But hey, the end result is really what matters. Winking smile

Here folks, was the damage…

What was all the mess for?  Goat Cheese Pasta with Spinach and Broccoli.  Oh yeaahhh.

This recipe is adapted from Real Simple’s asparagus goat cheese pasta.  I figured any greens would work well.

Goat Cheese Pasta with Spinach and Broccoli (serves 4)

Ingredients

  • 2 cups spinach
  • 1 cup broccoli (already cooked)
  • 1/2 pound thin spaghetti
  • 1 tablespoon unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 14 1/2-ounce can chicken broth
  • 4 ounces goat cheese
  • 1 teaspoon grated lemon peel
  • 1/2 cup grated Parmesan cheese
  • freshly ground black pepper

Directions

Heat a large pan of lightly salted water to boiling over high heat.  Add the spaghetti to the boiling water and cook according to the label directions until al dente.  Drain onto spinach. (it helps wilt it)

Meanwhile, in a saucepan over medium-high heat, melt the butter. Whisk in the flour.  Add the broth and cook for 2 minutes, stirring constantly, until the sauce thickens. Blend in the goat cheese and lemon peel.

Toss the spaghetti with the spinach, broccoli, sauce, and half the Parmesan. Serve with pepper to taste and the remaining Parmesan.

I loved the hint of lemon flavor in this dish.  And you know this girl loves her goat cheese.

I’ve read this post twice. Both times, I’ve read “goat cheese pizza” in the title. And both times I’ve been surprised when there was no pizza in the post, but instead pasta. :)

I like the accents of colour… very chic!

The meal looks delicious! And your place is gorgeous :) . Love the throw pillows! Yellow is my favorite color. And yes, I make a mess in the kitchen as well. I try to clean as I go if possible but that doesn’t always work out.

I believe that 1) goat cheese blends with the boldest of flavors (tomato, garlic, acids) and the mildest (nuts, lavender) and is much a cooks cheese. I love it with pizza, argula and pear….and 2) your house is a book clubbers dream! I love how you arrange them to be so pleasing that I just want to pluck one down, light a candle and relax

I love the touchest of yellow in your living room palette! I have been either on a TIGHT budget, living with my parents, or living in AK and haven’t really explored decorating on my own. However, I do know what I like when I see it and ME LIKEY your living room! You have a great eye.

Between the kids walking around w/sippy cups that leak, crackers that crumble and the flour & salt I seem the constantly be spilling, my kitchen is ALWAYS a mess. I say never trust a clean cook ;-)

ooooo you have no idea. When I entertain and really put together a menu that kitchen is total destruction! The more I do it though the better I am with containing the mess. I prep more ahead of time, yadda yadda. But still a mess. hahah. oh well. Love the goat cheese pasta!

That pasta dish sounds amazing…looks great, too! I am a MESS in the kitchen, too. It amazes me how much of a mess I make, really. Andddd not in a good way! But hey, it’s worth it in the end, just like you said!

I LOVE your place! I really need to jazz things up a bit…it makes a huge difference. Great work! And I can’t wait to see what changes you make to the blog. I love what you did most recently, so I’m anxious to see!
