To Enjoy List

Hello friends!

I’m loving this recipe I made for lunch!  Love love love!  How often do you eat your lunch at work, and an hour later you’re still hungry??  That’s the worst feeling!  Well guys and gals, this lunch will be sure to hold you over for hours.  It’s in part to a delicious food I like to call quinoa.

To learn more about quinoa, you can read a post I previously wrote.  I love the versatility of quinoa.  It even works well for breakfast.

Quinoa with Roasted Vegetables

Ingredients:

  • 2 cups low sodium vegetable broth
  • 1 cup quinoa
  • 2 cups roasted vegetables (chopped)
    • squash, peppers, mushroom, and onion..or any veggies you like!
  • Sprinkle of feta cheese (goat cheese would also work well)

Grill up your favorite vegetables.  Cook quinoa following package directions subbing out water for broth.  Cooking the quinoa in vegetable broth adds great flavor.

Combine quinoa with vegetables and top with feta cheese.  Enjoy!

I love grilling up veggies this time of year.  They are perfect in just about everything; especially this dish.

After reading Heather’s blog the other day, I couldn’t stop thinking about her To Enjoy List.  Included was a list of things she wants to enjoy everyday.  What a great idea!  I get so caught up in day to day activities; I don’t make time to enjoy the little things.  I thought I would share my list with you.

To Enjoy:

More cuddle time with my cats – Although I’m already referred to as crazy cat lady. Winking smile

Reading - I’ve been more busy than usual.  As a result, I’ve pushed aside reading (and haven’t finished the last few book club reads).  It’s something I’ve loved do since out of school and want to make more time for.

Cooking - Sometimes I’m starving when I get home, that I don’t take time to really enjoy cooking.

Being a Bridesmaid - Being in 3 weddings in 3 months has been a bit crazy.  I really want to take the time to enjoy this special moment with all of my friends.

awww I love your kitties :) That dress is cute! To enjoy would have to be cooking since I’ve been lacking time lately, dancing, cycling, and wedding planning!!! don’t freak out and enjoy it lol

Love the feta in the quinoa recipe. Also like this “enjoy list” concept. My boys are leaving for overnight camp I want to enjoy them and then I also want to enjoy my time away. I want to read and cook and enjoy my free time without rushing so much.

Aww your cats are cute. I wish I would’ve enjoyed my cat more when she was alive. Hug them for me!

I also want to enjoy the time I spend with my family instead of complaining about the annoying things they do. They do a lot of annoying things!! :)

Mmm that dish looks super satisfying. Add feta to anythign and it’s a winner in my book :)
I’m a bridesmaid in a wedding next week and my dress is similar to that one! I love it!

3 weddings in 3 months ahhh crazy!!! I have only been in two my entire life and they were a year apart. I can only imagine your crazyness right now with all these brides!

It has definitely been a bit crazy..but lots of fun! My mom always seems to get confused when I talk about wedding details. She’ll have to ask, “Now which wedding are you referring to?” It’s funny.

I love just eating quinoa straight up. I cook it a little longer so the bottom pieces get a little crunchy. It probably sounds strange, but it is SO good! By the way, your dress in the last photo is absolutely gorgeous!

I tried a quinoa salad recipe a few weeks ago that was somewhat similar to this one- loaded with veggies and creamy cheese! So good. I love quinoa’s texture!
