Chickpea-Stuffed Avocados

Hello hello!

I ended up staying up a bit later than planned, which made snoozing inevitable.  Who are we kidding, I snooze most days. Smile  My coworker is moving in with me for a couple months, so she came by last night to bring over her stuff.  I’m excited to have a roomie, even if for a short period of time!

In work news, I’m back to the good ol’ 8-6.  Work was slow today which made it a great day for catching up.  Isn’t the worst part about getting back from vacation the loads of emails you have waiting for you??

I didn’t plan out my meals as I usually do, since my friend was in town. While checking on twitter updates, I did spy a recipe I knew I had to make!  It’s from Today’s Diet and Nutrition, an online magazine.

I loved the freshness and simplicity of the dish.  The only change was swapping out dried basil.  I need to get a basil plant a.s.a.p.!

Chickpea-Stuffed Avocados (4 servings)

Ingredients:

  • 1 can chickpeas (rinsed and drained)
  • 1 small red bell pepper, finely chopped
  • ½ small red onion, peeled and minced
  • 2 tbsp Italian dressing
  • Sea salt
  • Fresh ground pepper
  • 2 large Hass avocados, halved and pitted
  • Fresh snipped dried basil

Directions:

Combine chickpeas, bell pepper, onion, and dressing in a bowl; add salt and pepper to taste.

Spoon into avocado halves and top with basil.

Literally, this came together in a mere ten minutes. How much do you love that!?!

This would be perfect as an appetizer.  Although the serving was for four, I split mine in two and scooped it out onto lettuce.

I just love avocado!!  They are a good source of fiber, potassium, B vitamins and folic acid.

Okay, chickpea-stuffed avocados sound seriously yum. Seriously, seriously, yum! I’m a huge avocado fan, so this definitely looks like an awesome meal. It’d make such a great lunch!

Your photo skills with the meal thing feel much sharper and more defined. In fact, your mentality feels that way as well, almost as if you were made for the summer season. My birthday is in the spring, and it is my favorite time of year. Perhaps you are the same way?

I’m an avocado fiend, love that recipe. It would be a fun thing to make for friends coming over. As for the “50 blogs” so insulted, no Foodtrainers- maybe we’re in the next 50, ha.

Love the chickpea filling. I bet it would be great in a sweet potato or even just on a bed of spinach/lettuce. And so cool you made the list!

I saw the same thing the other day and thought to myself I seriously need to try this ASAP. Hope it was delicious, I will be making this very soon as I am obsessed with avocados! :-)

Ps…I love your blog and can’t wait to start my own! I am going back to school to get my Master’s in Dietetics as I finally figured out what I want to be when I grow up at the age of 25 years old! It’s a long road since I work full-time in human resources, but I can’t wait to finally be an RD after a few more years!!! Thanks for the inspiration!

AMAZING! I was never really a big avacado gal, but I’m slowly sycing with the popular opinion of then: gotta have em! That dinner you made looks delicious! I loved chickpeas, so ya know…gottta have em!

I’m new to your blog, have been reading for about a week. For the month of June I’m eating only whole foods…no preservatives, no processed. I need to better my nutrition habits and 30 days is going to give me a kick start. :) So, when I came across your avocado recipe…I HAD to comment. 1. LOVE avocados. 2. that will be perfect for dinner tonight…I’ll just sub a homemade vinegarette for the italian- I think I even have all of the ingredients in my fridge. Thanks for sharing! :)

I’ve been known to add avocado to almost everything, including my oatmeal. It’s just perfect in every way.

That’s great that you’re going to have a roommate for a bit! I miss having girlfriends around all the time. Husbands just aren’t the same, either! Ha!

What a perfect lunch idea to bring to work. Rather than bring avocado slices to a salad why not bring a little salad to the avocado. And love chickpea. Hope all is well. Happy Summer :-)
