Even though I was off yesterday, I didn’t sit down until after 8. I’m so thankful to have the day off midweek, but house cleaning has gotten pushed aside due to other things: meetings, appointments, etc. A friend is coming to visit next week, so this coming Wednesday will be dedicated to cleaning the house top and bottom. Guests are good motivators for cleaning your house, that’s for sure.
I ended up having leftovers from the dinner I made last night. This recipe was so delicious I just had to share. I can’t seem to get enough of curry dishes lately. I’ve been experimenting with different flavors in the kitchen, and have loved every minute of it.
Tofu with Red Curry Paste, Peas, and Tomatoes (serves 4)Courtesy of Cooking Light
Ingredients
- 1 (14-ounce) package firm tofu, drained and cut into 1-inch cubes
- 2 tablespoons fresh lime juice
- 1 teaspoon ground
turmericgaram masala 1/4 teaspoon salt- 1/8 teaspoon black pepper
- 2 teaspoons olive oil
- 2 cups thinly sliced onion
- 1 cup light coconut milk
- 1 to 2 tablespoons red curry paste
- 1 cup shelled green peas (about 1 pound unshelled) or frozen green peas, thawed
- 1/2 cup chopped
yellowtomato - 4 cups hot cooked long-grain rice
Directions:
Place a large nonstick skillet over medium-high heat. Add tofu; cook until liquid from tofu is evaporated (about 3 minutes).
Remove tofu from pan; sprinkle with lime juice, turmeric garam masala, and pepper.
Heat oil in pan over medium-high heat. Add onion; sauté 5 minutes.
Add tofu, and cook 7 minutes or until golden.
Combine milk and curry paste; add to pan. Reduce heat, and simmer 3 minutes.
Add peas and tomato; cook 2 minutes.
Serve over rice.
One word..delicious! This dish had a slight kick from the curry paste. If you want more heat, I would add a bit more of the paste.
Let’s just say it now…curry does not photograph well. I think I managed to finagle a couple good shots. ![]()
Another Meatless May meal success!
Since I never cut down recipes, I brought some over for swanky sister to try out. She’s my guinea pig and will usually eat anything I make. She’s bringing it to work tomorrow, so fingers crossed.
I’m heading out with friends in a few for fro-yo and girl chat. Such an unbeatable combo!

I LOVE spicy foods. The spicier the better! It better burn or I’m not satisfied!
I love spice. My boys leave for camp end of June (sad) and I plan to cook with more spice. This looks great, not a tofu fan but love red curry. I never cut down recipe either. If you’re cooking great to have extra.
Spice, spice, spice… all the way. I like for my face to sweat when I eat curry
…that is, if I’m at a restaurant ordering. The hubs, not so much. So I have to tone it down for him. The things we do for love?

That curry dish looks great. I have tomatoes that need to be used, but won’t be home tonight to cook. This would have been perfect. Guests are definitely the perfect motivators for thoroughly cleaning the house!
I think the photos are great! Hubby is out of town next week and this is a meal that he may turn his nose up to, so I think it will have to be made!

Fro yo is my weakness! So yum…I definently love my food spicy. The spicier the better! I absolutely love this healthy curry recipe. The garam masala adds such a fabulous depth to dishes. Love it!
I am a total spicy person but for some reason never been a fan of the curry flavor. I tend to make spicy foods that you can barely eat lol.
I love a colorful curry. The spices, the coconut milk, veggies and a little brown rice. Yum. I’m a big fan of tofu. Can’t wait to try this.
