Monday Mix Up

Good evening!

This day went by surprisingly fast.  Maybe cause my coworker and I spent a lot of the time joking around which always makes the Mondays fly by.  I had to tell her about the silly dream I had last night.  Kate Middleton and I were besties.

I remember even helping her pick out her wedding dress in the dream. Too funny!  Keep an eye out for me at their wedding. Winking smile

Tonight, I threw together a simple dinner with a few staples I had in the kitchen.  I made a quiche of sorts.  Let’s call it a tortilla quiche. Instead of using dough, the tortilla makes a simple crust (and much quicker I might add).

Tortilla Quiche (serves 2)

Ingredients:

  • 4 eggs
  • Milk (approximately ¼ cup)
  • Feta cheese
  • Asparagus (cooked)
  • Tomato
  • Spinach
  • Any ingredients you like
  • 2 Tortillas

Directions:

  • Spray bottom of pan so the tortilla doesn’t stick. Lay tortilla in pan.

  • In bowl, combine ingredients and pour in pan.

(I ended up taking out some spinach cause I wanted it to cook evenly)

  • Bake in oven at 350 degrees for 25 minutes or until eggs have set.

Reminds me of the tart I made at my cooking class.  One of these days, I need to make the dough from scratch to take it to a whole new level.

Going to watch How I Met Your Mother and get ready for my morning spin class.  Meaning change into my workout clothes and get into bed. Open-mouthed smile  Think I’ll also try moving my alarm clock so the snooze button is out of reach.

That sounds fantastic! Going to have to try that one because I absolutely love eggs. They are definitely my quick meal of choice.
You know I hardly ever remember my dreams, but Chris on the other hand has some of the weirdest dreams I’ve ever thought possible lol
hmmm my Monday show was staring at my white computer screen trying to write. Well, I got out 2 pages at least :) Have fun at spin!

This is such an AWESOME idea. I never would have thought to use tortillas as a crust…so easy and so much better than making your own.

That looks like an absolutely beautiful and delish dish! I will be trying this in the near future.

For Monday nights, our TV viewing tends to be quite seasonal and sports-based. Fall = Monday Night Football. Spring & Summer = Detroit Tigers Baseball. I tend to avoid watching much on Mondays other than these because I usually get vetoed. I don’t mind this because there’s always Glee and American Idol to counter balance it all =)

I don’t have cable but I do watch shows on Hulu. But I know that Glee is on Mondays and if I had cable I would probably be watching that. :)
