Tropical Tofu

Happy Wednesday!

Yesterday was my dad’s birthday so the family went over to my parents for a little birthday celebration.

Moving on to today…

I am plowing through my to-do list.  I decided to break for lunch and make a delicious tofu dish.  Not my traditional lunch, but it was a cinch to throw together.  A while back, I saw a recipe for tofu with a coconut crust.  Since I can’t seem to find the recipe, I thought I would wing it.

Coconut and Pecan Tofu

Ingredients:

  • 2 tablespoons chopped pecans
  • 1 tablespoon unsweetened dried coconut
  • ½ cup cubed tofu (extra firm)
  • Salt and pepper to taste.

Directions:

  • Combine chopped pecans, coconut, salt and pepper.
  • Toss mixture with cubed tofu.
  • Bake in oven at 350 degrees for 20 minutes.

I cooked up rice and threw in slices of pineapple  for a truly tropical inspired dish.

I tried out this whole grain white rice I received a sample of at FNCE.

I enjoyed this rice and I think jasmine rice would have really made this dish!

This turned out excellent!  The coconut and pecans added a subtle pop to this dish.  I can’t wait to make it again.

Really interesting dish. I’m not a big fan of coconut but I adore pineapple. I really don’t have a singular fave tofu recipe. I sort of wing it each time LOL Have fun at your pump class!

Look great and so easy too. Love the family photo! Have you ever tried the Trader Joes frozen organic brown rice? Love that stuff!

No, I haven’t. Ill have to try that next time I go. Usually I make brown rice but I love the idea of it being frozen!

I love this post! And tofu! One of my favorite things to do with tofu is to make vegetarian kabobs. I marinate them with vegetables in different types of sauces like a coconut curry or a teriyaki and put them on skewers and bake them! So good and fun to make. They are great appetizers.

I have never thought to make tofu on the sweeter side. Looks so great! Also, Italian food is my abs fav I have zero self control when it comes down to it!

Happy Birthday to your pops!

I love baked tofu and the tropical spin sounds delicious!! I love baked tofu with carrots and broccoli and brown rice all tossed with a peanut-ginger-lime sauce. So good!

I love pineapple but cannot get on board with tofu. I would love to make a sweet and sour tofu – maybe I will try that!

I think with tofu, it will either be you love it or hate it. I love the idea of a sweet and sour tofu..yum!

Happy Bday to Swanky Dad!!

Coconut + Tofu looks fabulous, esp. with pineapple and pecans! What a great dish.

The nutrition education programs I oversee are for younger kiddos – It’s so funny to see them try new things. The teachers try to get them to say “I’m learning to like __” vs. yuck! Whenever I see or make tofu I think of myself because I used to HATE it. I’ve definitely “learned to like it”!

Yeah, tofu was definitely something I had to learn to like. One thing that is nice is that it takes on the flavors of whatever you cook it in.

I’m not a tofu gal but love coconut (a little too much). I make coconut shrimp and love the pineapple inclusion here. It comes across how close you are with your family in reading this blog and it’s so nice to see.
