My Early Valentine’s Day

Hello!  So much to say.  I hope this isn’t the longest post ever.  I will say that the weekend went by way too fast!

Saturday

I went to a kick butt body pump class then cleaned my house head to toe since I was hosting this month’s book club.   I also whipped up a batch of Seven Layer Magic Bar Cookies.  Now, these are not a healthy treat by any means, but very delicious they are!

Seven Layer Magic Bar Cookies (from Allrecipes)

Ingredients
  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup butter or margarine, melted
  • 1 (14 ounce) can sweetened Condensed Milk
  • 1 cup semi-sweet chocolate chips
  • 1 cup butterscotch-flavored chips
  • 1 1/3 cups flaked coconut
  • 1 cup chopped nuts ( I used walnuts)
Directions

1. Preheat oven to 350 degrees F (325 degrees F for glass baking pan). In small bowl, * combine graham cracker crumbs and butter; mix well.  Press crumb mixture firmly on bottom of 13×9-inch baking pan.  

*readers recommended adding melted butter to bottom of pan then topping with graham crackers. (which is what I ended up doing)

2. Pour sweetened condensed milk evenly over crumb mixture. Layer evenly with remaining ingredients; press down firmly with fork.

3. Bake 25 minutes or until lightly browned. Cool. Chill if desired. Cut into bars or diamonds. Store covered at room temperature.

(Nutrition information per serving: Calories: 257, Total Fat: 14.6g)

The only change I made was adding 1/2 cup peanut butter chips and  only adding 1/2 cup butterscotch chips since I didn’t have a whole bag. 

I had to steal a bite!  Holy amazing!  It was delicious!

Book club was a lot of fun, as always! 

I think we all enjoyed the book, but agreed that it was interesting and not your typical read.  I do love the original story of Pride and Prejudice very much.  It was funny that they were kicking zombie butt in this version.

We chose a few books for the next few months.  Next month’s book is Angela’s Ashes by Frank McCourt.

Sunday

I met one of my friends to try on bridesmaid dresses.  You might remember that I mentioned being in 3 weddings in 3 months.  Trying on dresses has been so much fun!  She is looking to do a dark brown color but these are a couple of the ones we tried on.

We did end up picking out some bridesmaid shoes for my friend’s wedding though!  I am excited since I know I will be able to wear them more than once! Open-mouthed smile

Later on, I went to my parents house for a “Valentine’s Day” dinner.  My mom made quite the delicious dinner.

My parents also got my sister and I a Valentine’s Day gift!  It is funny that after all these years, they still like to get us something.  Oh, and probably the fact that we are single. Winking smile

I use my magic bullet blender about 6 times a week…it is the best little gadget I think all single people need to own. Who needs a blender to make 2 servings of a smoothie???

I really, UBER despise Valentines Day unless you are in elementary school, or, it is your mom giving you some loving. There is something about obligatory giving that urks me, and the fact that it is easy to feel conscious about loving “wrong” or being a reject if you aren’t romantically involved.

Dessert? Best in the world: wine, second best, plain cheesecake. On the day I die, I would like both.

Happy Valentine’s Day! Your Magic Cookie Bars look wonderful. My mum still gets my brother and I something for Valentine’s Day. Usually my brother will get a gift card and I get a ton of fun pink stuff.

I love to make the standard brownie sundae. I know its nothing unique, but its soo delicious. Definitely my favorite dessert! Sometimes its nice to just keep it simple.

Love this post! That dessert look faaaantastic I would not have had the willpower to stay away from it!
My boyfriend and cooked dinner together last night but we don’t really do anything for Vday.
And a fave dessert…hmm I guess I don’t do a lot of my own dessert-making…but every once in a while I like to get a regular box of chocolate cake mix and make it and frost it :)

How awesome that you get a V-day gift from your parents! I think the “holiday” should be co-opted to be about love generally instead of romantic love. So your parents are right on track! :)

PS: the lavender / mauve / purple / whatever they’re calling it these days looks great on you! Nice cut!

And I’m a sucker for chocolate… but I also really like baking with tea. Matcha, earl grey, you name it!

I love bar cookies like that. Your’s look really good. So cute that you got a gift from your parents. Mine used to do that. I guess because I am married they figure they can stop now. Anything chocolate makes a good dessert for me!

7 layer bars a delish!! SO so good!

We celebrated Vday over the weekend. My parents never got us anything for vday (minus when I was in college as an excuse to send me care packages…).
How nice!!

My hubby and I are staying in tonight since he is working late but I am making him a delicious home cooked meal! Mediterranean pasta!

for valentines, the husband and i celebrated early on Saturday, just had dinner and drinks and chocolate (of course.) hope yours was well too!

mmMM! that dessert looks soo good. Our v-day was really laid back and chill. just had a picnic on the floor and watched a movie. It was fun though! Cute dresses too!
