Hello hello! My day off yesterday was not as productive as I had liked. I did get the usual stuff done, (laundry, clean, cook, etc.) but the rest of the time was spent playing with my iPhone. Sorry for all the phone talk lately. It really is just like getting a new toy! Of course, it hasn’t been all smooth sailing. I did manage to screw up my iTunes and lose all my music in the process. Thankfully, I did back up a few months ago so I still have most of my music saved.
Also, thanks for your case recommendations! I stopped in the Apple store and ended up picking out a bumper. I am a bit clumsy so I hope I didn’t make a bad choice.
The dinner I made last night was pretty fantastic! I got the recipe from a coworker. She recently purchased Tosca Reno’s Eat Clean Diet book. The food she has been bringing to work has looked excellent. She raved about one recipe in particular so I knew I had to give it a try. The only big flop I made was that I didn’t have rice vinegar, so I cut the serving and substituted with white wine vinegar.
Summer Salad (from Eat Clean Diet Book)
- 1 cup wild rice (prepare as usual)
- 1 large chopped tomato (I used 2)
- 1/2 cup corn
- 1 bunch green onions diced
- 1/4 cup chopped basil leaves
1/2 tsp salt- 1/2 tsp pepper
- 4 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 large clove garlic
- Added: ½ cup chickpeas
Directions:
Mix vinegar, sesame oil and garlic in a bowl as dressing.
Once rice is cooked…
add all other ingredients and top with dressing to taste.
All I can say is YUM!
I just love basil! It adds soo much flavor to this dish. For some added protein, I also threw in chickpeas. I can’t really take credit for that though. It was my coworkers idea. ![]()
As the name implies, this is a perfect dish for summer. I can almost picture myself in a dress and flip flops. A girl can only dream.

That salad looks delish! I love all the fresh ingredients–such a nice break from heavier winter foods. And those Girl Scout cookies look like the perfect dessert! I’ve ordered mine, but they haven’t arrived yet. Those things are just plain addictive! Kinda like iPhones.
I LOVE Tosca Reno! I just bought the book and the recipes are amazing. The salad that you made looks absolutely incredible! wow! I totally agree with you on the basil. It really does just add a gorgeous flavor note to any dish! I think Im really looking forward to summer tomatoes. The winter ones just arent the same…*sigh* =) Have a fantastic weekend!!
