Happy Friday! I can’t wait for the weekend! What are your weekend plans? I am going bridesmaid dress shopping with one of the brides and fellow blogger, Kristen. I saw one of the dresses she had in mind for us and it is really cute!
Work today went by pretty fast which is always a good thing. I don’t talk about my job all too often on my blog, but I have given you a peek into a typical day. When I am not seeing patients, I normally work on projects. That includes making handouts, bulletin boards, etc.
I thought I would show you something I just finished up…a lunch board.
Pretty snazzy, don’t ya’ think? Many of the kids we see eat the school lunches, so we always encourage packing a lunch. We figured it would be a nice visual to bring if we ever speak with a group outside of the office.
Although our weather has been beautiful, I thought soup was still be fitting for my Friday night.
I decided to make a simple soup recipe I saw on Food, Fitness, Fashion.
Spicy Refried Bean Soup
Ingredients:
- 1 can of fat free vegetarian refried beans
- 16 oz of organic veggie broth
- 1 cup of black beans, drained and rinsed
- 1 small can of corn, drained and rinsed
- 2 (10 oz.) cans of tomatoes with chilies (Rotel)
Combine in a pot and let simmer! That’s all, folks! I’m saying this recipe took about 10 minutes to throw together. Gotta love that!
This soup has a bit of a kick from the chilies in the Rotel salsa. I topped my bowl with crushed tortilla chips. Such a hearty and feel good type of dinner.
The refried beans add a nice creaminess to the soup. I ate my bowl right up!

I would have to say that chicken tortilla soup is one of my favs. Maybe that is why this soup was such a hit with me!

I eat so much soup in the winter…one of my faves is butternut squash and apple soup.

My favorite soup is probably a pureed butternut squash soup – sooo good! Your tortilla soup looks really good, too. Oh, also, I’m really JEALOUS of your weather. It’s 20s here and there is about 3-4 feet of snow on the ground – gross! Betcha wish you were back in Boston now, huh?

Soup. All soup. Love soup. Any soup. Almost… and right now, I’ve just finished my technicolour bean soup, and I’m genuinely sorry to see it go! It was perfect: the broth was tasty, the beans unmushy, and the veg not too overpowering.
Salsa in soup, eh? Must try it!
Right now…coconut (blended in the vita mix for 5 minutes), roasted butternut squash, chicken stock, garlic, touch o cayenne pepper…served with garnish of slivered pear.
That looks like an awesome soup. I only just learned about rotel. I guess in the south the mix cheese and a can of rotel and it is called rotel. I ate it once in my grad class. It was quite interesting. Have fun looking at bridesmaids dresses.
Loving your poster, and you just helped me learn how to pack my lunch. It only took until I was 24 lol. You should show more posters that you do like that they’re extremely helpful :]
Your soup looks amazing. I have been trying to do different soup recipes and haven’t really found any that I was a big fan of. I will for sure be giving this one a try!
