Happy Sunday! I had such a fun weekend! Saturday started off meeting some friends at the Bellagio Hotel. We were invited to attend a friend’s proposal. She wanted her family and friends to be there and was so surprised.
We met at the Bellagio Botanical Garden. The garden is changed every few months. All of the flowers and plants are real. It is pretty amazing.
Check out this (real) pumpkin! Wouldn’t I just love to have that. I could whip up so many pumpkin creations.
My friend Whitney getting proposed to by the man of her dreams. It was so sweet!
After her boyfriend proposed, we all had breakfast together at Cafe Bellagio.
I started off with a cup of coffee with one sugar and cream.
There was no many decadent options on the menu, but I figured I should still try and choose a healthier option. I ordered the Garden Omelet.
Roma Tomatoes, Broccoli, Onions, Bell Peppers, Avocado
Instead of hash browns, I substituted fresh fruit. The omelet was good but I probably should have ordered something a bit different since it is kind of hard to screw up an omelet.
It was served with toast and a tomato. The tomato was really yummy!

It was truly a special morning and I am so glad I got to be a part of it.
Later that day…
I met up with friends to tailgate and then attend the UNLV/UNR football game. UNLV and UNR are really big rivals so this game is not one to miss.
Now, I am not much of a football gal, but I do love the social aspect of the games (and the drinking).
A few (probably too many) beers were had…
Beer pong was played…
And in the evening, marshmallows were roasted…
And made into s’mores.
UNLV lost unfortunately, but I had such a great time regardless!
I have a friend that came in today so I am taking tomorrow off work to hang out. I am hoping to also get in a good run as well!

Wow looks like so much fun! The garden is gorgeous. My husband got a big 100 pound pumpkin and then realized he had to carry it up 37 steps lol. The proposal is way too cute!

The most impressive thing at the tailgate was the 16-foot breakfast burrito. It was like a python of cheese and flour.

No, the Rebels lost, darn it. I do not really like college football, but I did go to UNLV, so I have a special place in my heart for the team. I only went once the entire time I lived there.
I miss the Bellagio displays. That is awesome that he proposed to your friend there. Ryan proposed to me up in the Mt. Charleston area, on the Cathedral Rock hike.

You know its weird, the menu didn’t say what it was. We figured it was maybe a breadcrumb topping. It was really tasty!
