Good evening! My day just about flew by which is such a nice feeling. I hate when I catch a glimpse of the clock and it is only say, 10 am. That is the absolute worst.
I was excited to make my dinner tonight and had planned to make enough to have leftovers. One of my favorite summer foods to make are kabobs. Don’t they just feel like summer! They are super simple and it is just so fun to play with your food, isn’t it!?!
Dinner
First, I soaked the skewers in water so they do not burn. Make sure not to forget this step if you use wood skewers.
I marinated the chicken breast in a teriyaki marinade overnight. I also had chopped up my vegetables last night to save time tonight. I have green pepper, onion, and tomato. I decided last minute to add in the pineapple I had cut up yesterday.
Get your chopped chicken and veggies and start sliding them on.
A few minutes on the grill and these babies are done. The chicken was super tender and I loved the flavor the marinade gave it.
Piled over some barely, it is indeed the perfect summer meal. You will most likely be seeing this meal tomorrow. The one perk to cooking for one…leftovers.

- I think I am going to try out a 6 am boot camp class tomorrow morning. Not sure how I feel about doing bootcamp that early, but I am hopefully going to get up for it and give it a go!
