Happy Wednesday! For some reason I could not seem to come up with a title for this post. I sat there for so long before coming up with one, which still isn’t all that great. Bloggers, do you ever have trouble coming up with titles for your posts?
I woke up in the middle of the night to rain. I was so excited! No more rain this morning but it is overcast. I love days like this! It is such a nice break from the Vegas heat.
My favorite new thing to do on Wednesdays is to lay in bed with my computer. I read blogs, check my email, etc. Ok before you start thinking I am lazy, I honestly never do this. On the weekends, I always have an alarm set for my A.M. workouts. I am considering it my mid week treat! :) I still managed to clean up the house. I feel like I am always doing laundry!
I started my morning with a bowl of Kashi Heart to Heart Oat Flakes and Blueberry Clusters topped with sliced banana.
I know, I know, not that exciting. This cereal is just sooo good!
While doing stuff around the house, I munched on an apple. Crisp and juicy!
I had leftover coconut curry tofu from last night. I topped it onto some barley I had cooked earlier.
I usually am a rice and quinoa girl, but I am loving barley. Barley is a whole grain and has 3 grams of fiber for every 1/2 cup (cooked). It also has several vitamins and minerals including B vitamins, iron, magnesium, and zinc to name a few.
Side note: Make sure to check which type of barley you purchase. Pearl barley, for example, is not considered a whole grain and has undergone more processing so more nutrients are lost…still has some fiber though.
Going to head to body pump in a bit. Then I have got my hair appointment and then dinner at my parents. See you later!
