My Mini Vacay

Hello!  Happy 4th of July!  First off, can I start by saying I loved Eclipse!  I wasn’t sure what to expect, but I definitely was not disappointed.  I can’t wait for Breaking Dawn!  Have you seen Eclipse? 

I am so excited for the long weekend.  Yesterday, I met two friends at the Rio pool.  Cocktails were had.

It was so much fun to relax and I felt just like I was on a mini vacation.

I am going to my parents for a 4th of July party tonight!  I will be sure to post a recap tomorrow.  I wasn’t sure what I felt like making but I figured I couldn’t go wrong with this delicious broccoli salad recipe.  My friend’s mom gave me this recipe and everyone raved about it last time I made it. 

Broccoli Salad

Ingredients:

  • 4 cup broccoli buds
  • 1 cup raisins
  • 6 slices of cooked bacon chopped
  • 1/2 cup chopped red onion

Dressing:

  • 1 large egg
  • 1/2 cup sugar
  • 1/2 teaspoon dry mustard
  • 1 1/2 teaspoons corn starch
  • 1/4 cup white vinegar
  • 1/4 cup water
  • 1/4 teaspoon salt
  • 2 tbsp butter
  • 1/2 cup mayonnaise

Directions:

Mix egg, sugar, mustard, and corn starch-set aside.  Bring to a boil in a sauce pan the vinegar, water, and salt.  Add egg mix slowly-stir constantly.  Stir about 2 minutes until thick.

Remove from heat.  Add butter and mayonnaise.

Add broccoli, raisins, bacon, and onion.  Mix well.  Serve cold.

This recipe is super easy and super duper tasty!  Enjoy!

Yay so glad you loved Eclipse! You know they’re breaking Breaking Dawn into 2 parts?

that sounds like a great salad- i love broccoli, fav vegetable :) and that sounds like a healthy compromise.
I haven’t gotten into twilight AT ALL, it is so weird! all my friends love it- i’m so out of the loop!
