My Confession

June 30, 2010

I have a confession.  This Vegas heat is really getting to me.  I swere, it was in the 100’s at 6 am. You think being born and raised in Vegas I would be used to it by now.  Nope.  I still hate it.  I didn’t even want to sit outside this morning to eat my breakfast.  I am hoping to sit poolside this weekend.  That is really the only thing you can do in this heat.

Workout

I made it yet again to 5am spin.  The instructor was out last week so I was glad when I saw her face. She changed up her music today.  It was really good, aside from the Enrique Iglesias jam.  I’ve never been a fan of him.

I was starting to drag a bit toward the end of class until she played this ten minute dance mix.  It was so good and really kept me going.  She had us doing a lot of seated sprints while adding resistance.  It was definitely a tough workout today.

My friend asked me if I wanted to join her tomorrow for a bootcamp class.  I honestly can only seem to muster the courage to make it to that class every other month it seems.  I decided to take it as a challenge.  It will also be helpful having a friend there to complain about how bad it all hurts.

Breakfast

I was absolutely starving when I got done with class.  I usually don’t eat before spin class cause I literally get out of bed, brush my teeth, and go.  I was excited to try some new whole grain waffles I bought.

I topped them with peanut butter and sliced banana.  I had a glass of milk on the side.  It was such a filling breakfast.  I ended up eating most of the waffles but left a few bites.

I also stopped for a nonfat caramel latte on the way to work.  I figured I could treat myself for all my hard work this morning.

Lunch

I couldn’t wait to eat my lunch today.  Ok, who am I kidding, I am always looking forward to eating.  Today’s lunch was extra special. I made quinoa.  For those of you new readers who aren’t familiar with quinoa, you can read more about it in this post.

I sautéed peppers and onions in about ½ cup of chicken broth.  Once softened, I added the cooked quinoa and let it absorb all the liquid.  I threw in chickpeas and topped it with some goat cheese. Since goat cheese is so rich, you just need a light sprinkle to add a ton of flavor.  It is oh so delicious and filling.

Snacks

I snacked on some cherries early in the afternoon.  They are not as good as I was hoping.  I ended up throwing a couple away.

My other snack made up for it.  I tried a new mini Larabar.  It is Tropical Fruit Tart flavor.  It tasted like summer in a bar.  It was very fruity and flavorful.  I liked it a lot!

Later on, I snacked on a Babybel cheese.  Love these!

Dinner

I had big plans to cook dinner but I wasn’t feeling all that well.  Thankfully I still had leftovers from Sunday’s dinner.  I heated up a bowl of  fettuccini and roasted broccoli.  Just as good as the day I made it.

I am off to shower and relax. I am glad that I am off tomorrow. It will be a fun day of (loads and loads of) laundry. The exciting life I lead.  Hope you had a great day and thanks for reading!

First, I had NO idea that the tropical fruit flavor came in a mini bar! YUM!

And secondly, SO glad you showed how you made quinoa. Ive had a box in my pantry that I plan on making soon and I’ve been wondering how the heck to make it.

Yours looks good, and it seems like cooking it in chicken broth is the way to go.

Love quinoa and love chickpeas in there for added texture. It’s hot here too, but not quite as bad as where you’re at. It was 80 at 5:45 yesterday morning (overnight low). I am all about hanging out IN the pool all summer, every chance I can get.

I can’t imagine it being 100 degrees (or even close to that) at 6am! I will say though, I would rather have 100 degrees and DRY weather, than our 80 degrees and HUMIDITY! Ugh, I hate it. Humidity in Ohio is just awful. I don’t even dare do anything with my hair because it frizzes in two seconds anyway.

Love your quinoa creation. Quinoa is my favorite grain, other than oats :)

It’s been murderously hot here in Baltimore recently–14 days of 90+ heat, and once you add in the humidity, it feels over 100. It’s finally cooling down some, but the heat really zaps me. A lot. So don’t feel bad about it!

The new Enrique song “I Like It”? I usually don’t like him either, but I think it’s a great song for exercising too! Pitbull helps :0)

I am not sure if that was the song but I definitely could tell it was him. Maybe I should give it another listen. Sometimes I end up liking songs I originally hated.

ok I hate the heat too!! ugh. It makes me so lethargic. Yay for spin! I’ll have to come to that class now that Lalani was suspended. so stupid. I don’t think she’ll know until next week if she can teach again so I am boycotting that class. Did you make it to bootcamp? I’m scared of that class.

bummer i had bad cheeries too the other day. sometimes they sweet and juicy.. sometimes bitter and much too dense.

See, I loved the heat. Seriously, hospital AC was so cold that I even wore sweaters to work in the winter. I would take it off after work and put on a t-shirt, but I had to wear sweaters in >100 degree weather. oh well. I even wore sweats at night when the temp dropped because I would be cold after 120’2 during day and then 90 at night. Hang in there.
