Going Green

Hey all!  Happy St. Patrick’s Day and also Happy Birthday to my friend Trish!   The weather in Vegas has been perfect!  Today we were in the mid 70’s. Can’t it stay like this year round?

My dinner was inspired by St. Patty’s Day….PESTO PIZZA! Ok, not really.  I didn’t even think about it, but am glad to be making something GREEN!  I got this fabulous idea for pesto pizza from Angie

I used whole wheat dough as my crust.  I baked the crust first for 6 minutes at 425 degrees as I had done last time.   Crisp and slightly browned.

I added the yummy pesto, mozzarella cheese, tomatoes, and garlic.  I baked it for another 8 minutes at 425 degrees.

While I was in the kitchen prepping away, I turned on the 90’s music on my TV.  I was jamming out.  I even heard Right Said Fred’s “I’m Too Sexy.”  My friends and I loved that song growing up.  Anyway, back to the pizza….SUCCESS!

I will be making this again for sure.  It turned out so tasty.  Using pesto instead of marinara is definitely a good change.

I am definitely going to be having this for lunch tomorrow!  Pizza makes the best leftovers.  Do you prefer to eat leftover pizza cold or heated up?  Personally, I could eat it both ways.   

I had this slice x 2.  I didn’t make a salad, but don’t worry, I did fill up on some veggies earlier in the day.

After I had my delicious pizza,  I met my parents and a couple friends at an Irish pub called the Auld Dubliner.

They had fun Irish music and I enjoyed 2 Blue Moons.  I was tempted to get a green beer but they are so messy. I ended up getting green dye all over me the year I had them.

It was definitely a fun evening.  Tomorrow is my actual birthday and the funny thing is I don’t have any plans.  I am doing dinner and cake on Friday with family and then my amazing Cosmic Bowling party on Saturday.  I think I will make it a relaxing evening and gear up for the weekend.  I will be sure to post my treats and eats.  Now, although I do try to eat healthy the majority of the time, birthdays are definitely an exception. I will be indulging, but plan on getting back on track after the weekend is over!

HAPPY BIRTHDAY TOMORROW!!! Cosmic bowling?! That sounds like SO MUCH FUN! Seriously, I love bowling, and cosmic bowling is something I’ve never done. I know what it is though, and I want to come!

This pizza looks so delicious. What a great idea to make pesto pizza ! I have a new recipe for pesto that I have been meaning to try, and I bet it would be perfect on a pizza.

I like leftover pizza both ways too, for sure. I’ll take what I can get. All pizza tastes good, in my opinion.

Oh yum on that pizza!! Kind of reminds me of a Margharita pizza. I like my leftover pizza barely reheated. As in like 20 seconds nuked tops.

Nice pesto pizza! I haven’t had a pesto pizza since college – and let me tell you, that pizza was gag-worthy :O
