Missing Italy

Hello!

Only 2 more days until Thanksgiving!  I had all intentions to go to a yoga class tonight but now that I am sitting here blogging, watching E News, I might want to stay in. 
Tonight I wanted to whip up something quick and healthy.  If you didn't notice, I love Italian food.  I was lucky enough to get to study abroad in Italy for six weeks.  Since I wasn't able to take any nutrition classes while there, I studied Italian.  It is such a beautiful language but, unfortunately, I have forgotten most of what I have learned.  I lived in Torino.  On the weekends, we would travel to places such as Rome and Venice.  I had the best time of my life.  Here are a few pics of my trip…

I made so many great friends who I still keep in touch with.  I hope to post more pics of my trip to share with you, especially my eats.  I didn't have a great camera on the trip so a lot of my pictures were given to me from my friends and are not on my computer.  Tonight's dinner was a little bit of Italy.  It was Molto Bene!!

I had the idea for this recipe from Cooking Light.  The dish included grilled veggies (any you have in the fridge) tossed with pasta and goat cheese.  I lightly covered mushrooms, red peppers, and grape tomotoes with olive oil, salt, and pepper.  I did it the fancy way of course, on the George Foreman grill.  Can you tell it is just me living by myself yet.

t=”225″ />  I boiled the pasta then added it to my veggies.  I topped it with goat cheese and basil (from my basil plant..still alive). 

My dinner was delicious! It was light but very filling.  It took me all of 20 minutes to prep and throw together.  I have some leftovers so I might dig into those tomorrow.

I am going to watch Biggest Loser, enjoy a taste of this yummy chocolate bar and maybe I will do some yoga from Yoga Download.  I am off until Monday!  Yay!  I am hoping to get in some good workouts, family time, and some much needed Christmas shopping.

Looks like you had a wonderful time in Italy. I have travelled a lot but never got to study abroad. You are so lucky to have had this experience.

Tomorrow we are going to a dinner at one of Ryan’s coworker’s houses.

Your so lucky that you were able to go to italy! I want to go there someday myself.

For thanksgiving tomorrow I am going to my grandparents house and we are having a huge family dinner. Cant wait :) Have a happy thanksgiving!
